I have made a lot of gummies that came out wrong. Not a little wrong. Jello wrong. The kind where you pull them out of the mold, they wobble in a way that gummies should never wobble, and you think, why didn’t I just make actual jello and infuse that. Why am I standing here with sticky hands and a saucepan full of regret trying to fake my way into a candy texture I clearly do not know how to hit.
Easy gummies are the whole reason I started digging into pre-made gummy mixes in the first place. I love gummies because they are bite sized, which means I can dose them exactly the way I want without turning a whole pan of brownies into a math problem. But gummies are also the recipe most likely to go sideways on you. Move too slowly and the mixture sets in the pan before it ever hits the mold. Get the ratio wrong and you are back in jello territory. It is a lot of pressure for a candy.
