David Herbert's Fish Pie (from The Weekend Australian)

2 cups (500ml) fish stock

500g skinless salmon fillets

500g skinless white fish fillets

300g uncooked peeled prawns

175g frozen peas, defrosted

1 tablespoon chopped chives

1 cup (250ml) white wine

1 cup (250ml) double cream

1 heaped tablespoon cornflour

Topping

1kg new or chat potatoes, halved

500g sweet potatoes, peeled and cut into chunks

3 tablespoons olive oil

Bunch spring onions, chopped

140g cheddar cheese, grated

2 tablespoons chopped chives

Place stock in saucepan and bring to the boil; add fish fillets, simmer gently for 5 minutes. Remove fish with slotted spoon, reserving the stock, and flake into large chunks, removing any bones. Spread into an ovenproof dish with prawns, peas and chives. Bring reserved stock, wine and cream to the boil; remove from heat. Mix cornflour to a paste with 1 tablespoon of water; whisk into sauce. Return to heat and cook, stirring, until thickened. Pour sauce over fish; set aside. Boil all potatoes in salted water until tender.

Drain, then return to pan with olive oil, spring onions and half the cheese and chives. Season, and crush lightly with a fork or potato masher. Spoon potato topping over fish; sprinkle with remaining cheese and chives. Cook for 30-35 minutes in a preheated 190C (fan) oven until topping is golden and the filling is bubbling. Serves 4-6

We recorded this show just a couple of hours after George Pell's conviction was quashed by the high court. We try and make sense of that ruling and reflect on another week of the 'new normal' during this Coronavirus crisis.

Caro makes a few predicitions about the fate of the 2020 season and Caro and Corrie share a 'Crush of the Week' on The Queen, whose recent public address was on point. Watch it HERE.

INGREDIENTS

500g red or brown lentils

2 brown onions, roughly chopped

3 cloves of garlic, roughly chopped

3 bay leaves

2 tablespoons tomato paste

Pepper and salt

Water

Red wine vinegar and olive oil to serve

METHOD

Rinse the lentils and put them in a pot with almost 2 litres of cold water. Bring to the boil, turn off the heat and throw this water away. Rinse the lentils.

Fill the pot with 6 fresh cups of water. Add the lentils, onions, garlic and bay leaves and bring to the boil. Skim the surface if any white foam appears.

Once it has reached the boil, turn down the heat to simmer and add the tomato paste and pepper and salt. Simmer for around 45 minutes until the lentils are soft and the soup has thickened. (you may need to add more water).

Ladle into bowls and serve with a splash of red wine vinegar and a good swirl of olive oil. (I also like a good blob of Greek yoghurt, and a few chopped herbs on top, but this is not traditional!)

Light Lemon and Garlic Pasta with Salmon

Ingredients

· 16 oz. rigatoni/pasta

· 1 teaspoon garlic, minced

· 2 tablespoons extra virgin olive oil

· 1/2 cup basil leaves, finely chopped

· Salt and pepper to taste

· 1 lb. salmon fillet

· Zest of one lemon

· 2 tablespoons lemon juice

· 2 teaspoons capers

· Parmesan cheese, shaved or grated

INSTRUCTIONS

1. Cook the pasta according to package directions

2. Meanwhile, season salmon with salt and pepper to taste and bake at 350 degrees F for 15-20 minutes, depending on thickness

3. Once the pasta is cooked, drain and toss with garlic, olive oil, basil and season with salt and pepper to taste

4. Add lemon juice, zest and capers to the pasta and toss to mix

5. Flake the salmon into bite-size pieces

6. Gently toss salmon with the pasta

7. Dish and serve hot topped with freshly grated or shaved Parmesan cheese

Jane's Tuna Dip

1 large can of tuna

Lemon zest and squeeze of lemon (to taste).

1/3 Cup of whole egg mayo

Ground black pepper and a dash of cayenne (optional)

1/4 cup parsley

1 spring onion

Dash of brandy

Put all of your ingredients into the food processor and blend.
