We hope you had a great World Vegan Day, and this week, in our Main Topic, we wanted to offer you some ways you can celebrate all month long!

We also pay tribute to animal advocate, Karen Davis, who passed away this week.
Karen was the founder of United Poultry Concerns and spent her life fighting for animals in the animal agriculture industry. She will be missed by many, and we hope that her amazing work will live on.

In our Noteworthy Segment, we update you on the Right to Rescue trial involving animal advocate, Wayne Hsiung. We didn't get the verdict that we were all hoping for.

We have a new Listener Recipe from listener, Ray Rios. It's his delicious and completely whole food vegan mac & cheese recipe that he was kind enough to share with us!

Ray Rios’ Vegan Mac & Cheese

"For everyone who came to The Great Vegan Mac and Cheez Cook-Off and everyone who didn’t. I wanted to share my cheese sauce recipe for everyone to be able to make a healthy Mac and cheese option."

2 cups potatoes unpeeled

1 cup carrots, peeled and chopped

½ cup unsweetened almond milk

½ cup nutritional yeast

1 tablespoon lemon juice

2 teaspoon salt

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika 

Cut potatoes and carrots boil until soft put all ingredients in a blender blend and serve with your favorite pasta.
