Australian researchers published a study in the journal Nature Structural and Molecular Biology linking bacterial exposure as a possible environmental risk factor for developing Celiac Disease. This adds to the body of knowledge about possible triggers. There's been a rise in Celiac diagnosis: between 1948 and 1954, 0.2 percent of those samples had celiac disease. When compared to more recent cohorts in the late 2000s, celiac disease was four times more prevalent.

It continues to puzzle researchers is the overall increase in prevalence.

Oat flour seems to be showing up in more gluten free products then ever. But even if a package is labeled gluten free, we have to dig further to determine the source of the oats used in the flour. Compounding this is if manufactures optically sort the oats. That's when errant grains - like wheat or barley - are mechanically removed from a batch of oats. The problem: it can be very easy for gluten - containing grains to be missed. Here's a great visual from Gluten Dude.
