Clemmie Donohoe’s Prawn Rolls with Lemon Mayo
INGREDIENTS
Good fresh bread roles
Prawns (peeled and deveined) then cut in half
2-3 celery sticks
Chives
Tarragon
Lettuce

For the lemon mayo
2 egg yolks
Juice from one and a half lemons
Neutral oil (like grape seed oil)
1 tbsp Dijon mustard
Good sea salt flakes
Method
Add the egg yolks into a food processor followed by lemon juice, dijon and salt. Whizz these ingredients up and then slowly add the oil a little at a time
Blend until thickened.

METHOD
Chop the herbs and the celery (not too finely for the celery, you want a bit of crunch). Chuck everything in a bowl. Add a generous amount of cracked pepper and salt. Stuff in the roll with the lettuce. Too easy!

Split the rolls and fill with lettuce and the prawn mix

DONNA HAY’S CHICKEN, CHORIZO AND POTATO TRAY BAKE
INGREDIENTS
1KG ROASTING POTATOES, PEELED AND SLICED INTO THIN WEDGES
2 RED ONIONS, PEELED AND SLICED INTO WEDGES
¼ CUP (60ML) EXTRA VIRGIN OLIVE OIL
SEA SALT AND CRACKED BLACK PEPPER
4 X 125G CHICKEN THIGH FILLETS, TRIMMED AND HALVED
3 CHORIZO SAUSAGES, CUT INTO THIRDS
1 TABLESPOON SWEET SMOKED PAPRIKA
8 SPRIGS OREGANO
2 TABLESPOONS PURE MAPLE SYRUP
4 STALKS KALE (110G), STEMS REMOVED, LEAVES TORN
METHOD
Preheat oven to 220°C (425°F).
Place the potatoes, onion, 2 tablespoons oil, salt and pepper in a bowl and toss to coat. Place on a large baking tray lined with non-stick baking paper and bake for 20–25 minutes or until lightly golden.
While the potatoes are cooking, combine the chicken, chorizo, paprika, oregano, maple syrup and remaining oil and toss to coat.
Place the kale on top of the potatoes, top with the chicken and chorizo mixture and cook for a further 20–25 minutes or until the chicken is golden and cooked through. Serves 4

Gazpacho
Gazpacho recipes about but we include this one because it’s great for guests who know each other slightly, or not at all. It always makes them the firmest of friends before the second course appears on the table.
Puree in blender, or through a fine sieve;
2 cucumbers, peeled seeded and sliced
1 x 15 oz can tomatoes (appx two 400g tins)
1 x 16 oz can tomato puree / passata (ie one bottle or two cans)
1 slice white bread which has been soaked in cold water from which surplus liquid has been squeezed
1 large beef stock cube dissolved in 2 cups of boiling water
1 tablespoon salad oil

Blueberry, Pistachio and Coconut Cake by Sabrina Ghayour

Serves 8-10

3 eggs
150g caster sugar
1 teaspoon vanilla bean paste
1 teaspoon almond extract
1 teaspoon lemon extract
50g desiccated coconut
175g unsalted butter, melted
175g plain flour
1 teaspoon baking powder
4 tablespoons of milk
Generous handful of pistachios
200g blueberries

Preheat the oven to 170 degrees C. Line a 900g loaf tin with a non stick paper liner or baking paper.

Put the eggs, sugar, vanilla bean paste and almond and lemon extracts into a large mixing bowl and beat together until well combined. Add the coconut and mix well, then stir in the melted butter until incorporated. Add the flour, baking powder and milk and mix until smooth. Finally stir in the pistachios, then gently fold in the blueberries.

Pour the batter into the preprepared loaf tin and bake for about 1 hour or until cooking through and a knife inserted into the centres comes out clean. Remove from the oven, turn the cake out of the tin onto a
