For fifteen years Pure South has been celebrating the food and produce from Tasmania, and we spoke to chef and director Phillip Kennedy about how the restaurant came about. We also chatted about how Tasmania has matured in the time the restaurant has been open, and how it's no longer just the "Apple Isle". We also chatted about their upcoming Vin Diemen wine event on August 12.
To finish the show we were joined by Mr Ottorino chef and owner Matthew Tine about his family's background in the restaurant industry, his own journey as a chef, and his approach to traditional Italian cuisine.

We checked in with John at the Queen Vic Market.

Even further afield we chatted to Dom Hall, the current chef stationed at Casey Base in Antartica. Their annual mid-winter's feast is happening in a few weeks and discussed what's on the menu, how you manage to prep food for so many people in the middle of nowhere, and how they take their coffee waaaaay down south.
It's suddenly winter in Melbourne, and on today's show we spoke to Cam Russell about this season's Mornington Peninsula mushroom tours, we had a market report with John at the Queen Vic, and asked food writers Michael Harden and Hilary McNevin what they like to cook at home.
A packed show today, starting with the chef behind Collingwood's Little Latin Lucy Renee Trudeau. She's been in Australia for eight years, and we spoke about her native California and the emergence of decent-quality Mexican cuisine in Melbourne.
It's been 16 years since Michele Curtis and Alan Campion released their first edition of In The Kitchen, and to celebrate the release of their 2018 edition they joined us in the studio to talk about what's changed in Melbourne since the first release (quinoa anyone?), as well as some of their favourite recipes from the book.
Nick Stanton is the man behind the kitchen of Chapel St's Ramblr, and we chatted about his apprenticeship in a massive hotel kitchen, how he's working with Asian flavours despite his classic French training, and the piles of waste that results from restaurants using the sous-vide cooking method.
On today's show we spoke about a yummy prawn stir-fry that Cam concocted during the week, and also mentioned David Chang's excellent Ugly Delicious series on Netflix.
It's been too long since we had Bacash's Michael Bacash on the show, and we chatted about how people are still afraid of cooking fish and how to try and get confident with it. We also spoke about the new commercial fishing laws in Port Phillip Bay and sustainable fishing in general.
We also had a market report from John at the Queen Vic Market, with a rare venture into politics!
We also mentioned what we think is the best seafood cookbook in Australia: the Australian Fish & Seafood Cookbook by Susman, Huckstep, Swan & Hodges.

To finish the show we chatted to our winemaking buddy Duncan Buchanan about the few remaining grapes on the vine, and the possible effects of climate change on the industry.
We took it fairly easy for an Easter Sunday today, and covered some foods that we thought were pretty delicious over the last week. We also spoke to our old wine bud Matt Skinner about Easter at his house and what he's drinking with it.
