James Smith AKA The Tattooed Butcher. This award winning legend stole the competitive butchering scene just six months after starting his apprenticeship. He shares with us all that he has learned from his experiences and how this fuelled his confidence to build and run his own brand 'The Tattooed Butcher'.  

Dedicated to teaching others, James runs his own 'nose to tail' butchering and barbecuing classes and shares multiple recipes and demonstrations  on his socials. On top of this, he represents his country, New Zealand, on the world stage as part of their National Butchery Team, The Sharp Blacks.

Dale Spencer, current Australian Steeler, shares how his knowledge and skills as a former chef helped to launch his butchering career, using this to earn his position in the Australian Butchering Team. Shannon Walker is first and foremost a Butcher but add on to that a Teacher of Animal Welfare & Game Harvesting, Publisher of The Butcher's Cookbook and Braintrust behind the Butcher Wars Competition at Meatstock.
