  • Veg Chili
You eat food everyday. But, are you really eating food? I mean food made in the natural environment, or made by some large industrial corporations in some food manufacturing facilities?
In his Netfilx documentary series Cooked, Mike Pollan told us that the food industry has been trying to undermine cooking as an everyday practice. Some people have since lost the knowledge of cooking, that their parents have ever mastered.
If you think you’d better cook at home, because you know what you put into your mouth. I give you a thumbs-up, because that’s the way it should be. Well, you may have heard some vegetarian chili recipes, or meatless chili, or tried some vegan chilli at restaurants. But you have wondered what is a simple chili recipe, or a homemade chili recipe. Today we are not learning to make an ultimate vegan chili, but a veg chili that is healthy, easy to make, and fill half your plate with vegetables for sure. Let’s have a listen together!

  • Shredded Chicken But How Many and What About Seasoning
In this episode, I studied why people don’t cook at home. Ken Albala said something very intuitive in his TED talk and I think it’s worth sharing. Also recent trend of ordering food from professional chefs may be one of the reasons that stopped us cooking at home. Check the links in the show notes below for more details.
I actually found that recipes tend to give us exact amount, and exact instructions. What I also found out is that some real chefs don’t have a strict rule on how much to put in their dishes. So this could be a topic that I cover more. Let me know if you are interested in this topic as well.
Well, today we are learning a you pick what to put how many you put recipe, shredded chicken! Let’s have a listen together!

  • Baked Sweet Potato in Water
Frustrated peeling the skin of a baked sweet potato? Oh yes, I found it hard, too. But not now, because last December I learned this secret method at a local community kitchen.
Be mindful, as we’ve learned in one of our previous episodes, of your environment. This way we will appreciate what we have already got, thus we will have more happiness. For the last few days, it’s been below 10 degrees celsius. I like to bake when the weather turns cold, because baking makes the kitchen warm. Baked sweet potatoes are so delicious and nutritious, except it’s hard to peel the skins. However baked sweet potatoes at a local community kitchen were very tender and pretty easy to peel the skin. Because I was mindful, I noticed it and was very curious about it. So I asked how the baking was done. And here is the secret recipe! let’s have a listen together!

  • Spanish Cream and Happy Thanksgiving
This weekend is the Canadian Thanksgiving. Are you thinking of making something special for your family or friends?
I’ve been thinking what would be a traditional Thanksgiving dinner like for a typical French Canadian family. So I asked my good neighbour again for a recipe for a traditional Thanksgiving dinner. He recommended a few desserts because they are easy to make. Out of curiosity, I picked Spanish Cream, which sounds so foreign. He said that the recipe was at least 60 years back, and some of the ingredients are not available now. So he has used substitution. I can’t wait to share with you. Let’s listen together.
Make this Spanish Cream dessert for your family or friends and have a magic weekend! Happy Thanksgiving to you!
Tips: 1. Better pour the mixture from pot into multiple small serving glass bowls, let them cool down, then move into refrigerator to allow them be hard set.
    2. When they are firmly set, take out from the fridge, then add red wine and egg white on top. This way they are ready to be served quickly.
I’d like to also thank my neighbours and friends, who have given me support in the making of this podcast in the past. Please accept my sincere appreciation. I am really grateful to your help, assistance and sharing. Sharing is caring, so I know you care. Happy Thanksgiving to you all!
