Amol Rajan was born in Kolkata and raised in south London. As a boy he dreamt of becoming a cricketer and would watch tapes of Shane Warne on repeat. He studied English at the University of Cambridge before beginning a career in journalism, becoming one of the youngest ever UK editors of a national newspaper, the Independent, in 2013. Amol spent six years as the BBC’s media editor before taking over the reins on two of their flagship shows, co-hosting Radio 4’s Today programme, along with the Today podcast, and last year succeeding Jeremy Paxman as quizmaster on University Challenge.

Nick mixes a cocktail for Amol, who calls himself a piña colada obsessive, while Angela prepares a delicious coconut fish curry with scotch bonnet & makrut lime leaves. The experts at Waitrose pair the meal with a Saint Clair Gimblett Gravels Reserve Viognier from New Zealand. A seasoned conversationalist and big fan of Dish, Amol jumps straight into chats about the challenges of a very early alarm call, parenting four children and what kind of restaurant critic he used to be.

Nick and Angela welcome an OG Derry girl to Dish HQ.

Saoirse-Monica Jackson grew up in Northern Ireland and studied acting at the Arden School of Theatre in Manchester. She is best known and loved for her portrayal of Erin Quinn in the Emmy award-winning series Derry Girls. Over three seasons the 90s-set comedy became the most popular show on Channel 4 and is now a hit with a global audience on Netflix. It wasn’t long before Hollywood came knocking and Saoirse-Monica won a role in the DC superhero movie The Flash. She is currently starring in period drama The Doll Factory on Paramount+ and later in the year will also appear in The Decameron, based on Giovanni Boccaccio’s 14th-century collection of comic short stories.

Nick kicks off proceedings with a bottle of the Waitrose loved & found Nerello Mascalese rosé while Angela puts the finishing touches to the best lasagne; a recipe by Martha Collison. As our trio tuck into their meal, they enjoy a delicious glass of the Waitrose loved & found Lacrima and discuss the pitfalls of planning a birthday party, Saoirse-Monica’s favourite snacks and Derry Girls the Movie.

Nick and Angela welcome an author and charity co-founder to Dish HQ.

Dawn O’Porter was born in Scotland but grew up in Guernsey with her aunt and uncle. She spent three years at the Liverpool School for Performing Arts but decided that acting wasn’t for her and got into TV instead. Dawn made her name making documentaries, which explored topics like dieting, dating, pregnancy and polyamory. She moved to LA and met her husband, actor Chris O’Dowd. In 2013, Dawn published her first novel Paper Aeroplanes and has released several books since, including the Sunday Times best-seller, The Cows in 2016. She is one of the founding members of the charity Choose Love which helps refugees all over the world.

Angela prepares The Best Fish Pie by Martha Collison for seafood fan Dawn with garden peas while Nick pours a Waitrose Loved & Found Carignan blanc. Talk at the table turns to Dawn's love of hosting and her desire to be left alone in the kitchen, kids names and why a tortoise is the pet you never knew you wanted.

Nick and Angela welcome one of the world’s favourite actors to Christmas dinner at Casa Grimshaw.

Florence Pugh comes from a family of performers and cooks, so it’s no surprise that she has mastered both. Her first big role came in 2016, when she played Katherine in Lady Macbeth and by 2020 she was nominated for an Oscar for best supporting actress as Amy March in Little Women. In 2023 Florence starred in and exec produced A Good Person with Morgan Freeman and starred in Christopher Nolan’s Oppenheimer. In 2024 we will see her in the highly anticipated Dune 2. Florence loves food and has her own YouTube channel, Cooking with Flo, where her fans can watch her make her favourite meals.

Angela has created a wonderful Christmas menu for Waitrose and you can find all the details and her tips and tricks in Waitrose Food magazine online or in store. Angela prepares a pear, Gorgonzola and red chicory salad to start, followed by roast turkey with rosemary, thyme and lemon butter with an apricot, sausage, sage and almond stuffing. On the side are all the trimmings: roast potatoes with confit garlic, spiced cranberry sauce, turkey gravy, Brussels sprouts with hazelnut pangrattato and orange and honey-glazed carrots. And they finish with Florence’s favourite dessert, tiramisu.

Nick and Florence make cocktails to start and our trio enjoy a Fenaroli Pecorino Superiore and a Villa Antinori Rosso over dinner. The experts at Waitrose also recommend a Waitrose Champagne blanc de noir, which goes perfectly with this Christmas spread.

Massimo Bottura hails from the Emilia-Romagna region of Italy, the nation’s food capital. A renowned restaurateur, hotelier and contemporary art aficionado, Massimo established Osteria Francescana, his three-Michelin-star restaurant in Modena, in 1995. The eatery was voted the world's best restaurant in 2016 and 2018 and features in the Netflix show, Chef’s Table. Massimo Bottura is highly respected for his innovative approach to Italian cuisine, combining tradition with modern techniques. He is an advocate of sustainability and established his non-profit organisation Food for Soul to combat hunger and reduce food waste. Massimo and his wife Lara have 

co-written Slow Food Fast Cars, recipes and stories from Casa Maria Luigia, which is out now.

Angela prepares a delicious miso pork ramen, which Massimo absolutely adores, and though our trio don’t indulge, the experts at Waitrose pair this meal with a Yering Station The Elms Pinot Noir. Nick and Angela welcome the UK’s favourite PE teacher to Dish HQ.

The Body Coach began his career as a personal trainer in south-west London in 2012. Joe Wicks harnessed the power of social media and soon thousands of people were following his food and fitness content. During the Covid pandemic, he launched PE with Joe and live-streamed daily workouts for kids stuck at home, which became a global hit and raised money for the NHS. Joe was awarded a Guinness World Record for the most viewers of a fitness workout live-stream on YouTube, with more than 950,000 households tuning in on 24 March 2020. His new book Feel Good in 15: 15-minute Recipes, Workouts + Health Hacks is out now.

Nick and Angela welcome a wine expert to Dish HQ.

Helen McGinn is an award-winning author, drinks writer and TV wine presenter. Having cut her teeth as a supermarket wine buyer, she went on to found a blog, The Knackered Mother’s Wine Club, which has since become a best-selling book. Helen is the much-loved wine expert on BBC1’s Saturday Kitchen and writes a monthly wine column for Waitrose Food Magazine.

In this episode, Nick and Angela skip the main course and head straight to the cheese. Helen brings a selection of wine and cheese to the dish table to inspire you this festive season and starts with a bottle of fizz from South Africa, Graham Beck Chardonnay Pinot Noir Brut NV, which our trio tastes with a pecorino and a Cornish Cheese Co. Cornish Brie (available in-store at the Waitrose cheese counter). Next up is a white wine from Bordeaux, Dourthe Roqueblanche Sauvignon Blanc, which Helen pairs with the Clara goat’s cheese, also available at the in-store counter. To follow, a malbec rosé from Argentina goes perfectly with Highmoor, a washed rind cheese from Oxfordshire. Helen pours a red from South Africa, Reyneke Organic Cabernet Sauvignon Merlot, which Nick and Angela try with a Godminster organic vintage cheddar. And finally, Helen recommends a sweet wine, Carte Or Muscat de Beaumes-de-Venise NV, which she pairs with the No.1 Colston Bassett Stilton.

Dr. Maggie Aderin-Pocock MBE is a renowned space and science educator and a prominent figure in the field of astronomy. She began watching the skies from her council flat in North London as a child and went on to study physics and mechanical engineering at Imperial College London. It is Maggie’s ambition to go to space one day and last year she was named a ‘Barbie Role Model’ for her work promoting science careers to girls. She became the co-host of the BBC’s The Sky at Night in 2007 succeeding Sir Patrick Moore. Her new book The Art of Stargazing is out now.

Miriam Margolyes OBE is renowned for her acting career spanning over five decades, but it is her inimitable sense of humour that has earned her a special place in the hearts of audiences worldwide. Miriam was the voice of the Cadbury’s caramel bunny in 1990, won a BAFTA for her role in The Age of Innocence in 1994 and portrayed Professor Sprout in the Harry Potter franchise. Her autobiography, This Much is True, sold three million copies and her new book, Oh Miriam! Stories from an Extraordinary Life is out now.

Though not a cook, Miriam absolutely loves food and tucks into Angela’s delicious sage and rosemary chicken stew with mash potato, followed by a tarte tatin, with gusto. This episode is a hilarious glimpse into the incredible life of Miriam Margolyes. She discusses her Vogue cover shoot, why she lives with housemates rather than her partner and what it was like having dinner in Sandringham.

Monty Don OBE is a horticulturist, broadcaster and writer. He made his TV debut on the gardening segment on This Morning, which led to further work with the BBC and Channel 4. In 2002, he was announced as the new lead presenter on Gardeners’ World, taking over from Alan Titchmarsh, and was the first self-taught horticulturist/presenter in the show's history. Monty has travelled the globe making programmes like Around the World in 80 Gardens and Monty Don’s Paradise Gardens, and presents the BBC coverage of The RHS Chelsea Flower Show. He has written many books on gardening, cooking and his beloved dogs.

Angela prepares two delicious dishes by Diana Henry, Daube de Boeuf with a macaroni gratin for Monty, who loves to eat seasonal produce, and Nick pours a very special Californian wine, a  J Vineyards Russian River Pinot Noir.
