Today we are very blessed to talk with and learn from the inspiring Mimi Kirk. She was named the “sexiest vegetarian over 50” by PETA. She is an author and speaker who travels the world sharing her story of living a vibrant, healthy, happy life throughout her many decades of life and experience as she now turns 80. She shares so many powerful words of wisdom on healthy eating, thinking, feeling, and living that we can all benefit from, regardless of our circumstances or age.

Try out her easy and delicious “Seed Cereal” recipe:
Simple Seed Breakfast Bowl
2 heaping tablespoons gluten free organic oats
1 tablespoon each of pumpkin sunflower, hemp, chia, and flax seeds.
You can also add several whole almonds if desired
Mix together in your serving bowl and add almond milk or your favorite non-dairy milk to cover.
Add berries, or other chopped fruits of choice.
A drizzle of maple syrup and that’s it.
Delicious, quick and healthy.
