Meathead brought up Koji a few months ago and there was a renewed interest from the audience on how it all works and what applications it can be used on. Jeremy will give us the background on Koji, where it comes from and how to get it going to be a useable product. Then, we will dig into the 4 things you may or may not want to try it on…namely…the 4 big BBQ meats. If time allows, we will also cover the use on steak for that dry-aged flavor. Jeremy was first on the show back near the end of 2018 and I am honored to have him join me once again!
