Within the minutes of this segment, Sterling really goes all in on his chicken process at the time…talks about time, temp and what the judges might think of texture at certain temperatures. He also was very open about how the whole competition scene was changing at this time in 2015. Very interesting to hear a top cook talk about things he’s working on both “in competition” and also trying to just become better from a high-level as a team.
