Dry aging and what happens to the meat to get you those flavors over time that are sought after by high end beef lovers, wet aging and what that does to your beef as it happens and all points in between. We might also discuss why, according to Meathead, griddling should not be classified as any kind of BBQ/Grilling cooking method.
