Crostini with Mushrooms, Prosciutto, and Blue Cheese

Ingredients

MAKES ABOUT 18 SERVINGS3

tablespoons butter

1/2 pound fresh shiitake mushrooms, stemmed, caps chopped

4 ounces crimini mushrooms, chopped

2 garlic cloves, minced

1/2 cup whipping cream

1/2 cup crumbled blue cheese (about 2 ounces)

1/2 tablespoons chopped thinly sliced prosciutto (about 2 1/2 ounces)

18 1/2-inch-thick diagonal bread slices cut from 1 sourdough baguette

Julia’s Tomato Soup

Chop Onions, garlic and one red pepper and saute

Chop tomatoes and cook separately until they’ve cooked down

then push through a strainer.

Add all of the ingredients together with a bit of sugar, some white

wine and enough chicken stock. Cook a little further and then

blend. Season to taste.

One-pan chicken and haloumi bake with honey and lemon by Katrina Meynink

The ultimate shove-in-a-pan-and-call-dinner-done meal. So quick, so easy and a total crowd pleaser. By adding a decent lug of honey to the marinade, the sugars help brown and crisp the top of the chicken without having to pre-fry first.

Ingredients

5 chicken marylands (or Anna uses chicken chops).

200g haloumi, sliced about 2cm thick

3 lemons, halved

1 head of garlic, halved horizontally

2-3 large sprigs rosemary, plus extra to serve

Marinade

2 tsp dried oregano

3 tbsp hone
