In today’s episode I’m talking to the awesome Yeshe Dawa – owner and creator of The Midnight Baker. Yeshe is the creator of the Freedom Loaf, a gluten, dairy, refined sugar and yeastfree bread, which is sold at cafes, restaurants and retailers across the country. Along with her team, Yeshe makes the Freedom loaf and a few other goodies at her commercial kitchen on Dominion Road in Auckland. The idea for the Midnight Baker came from a love of baking treats late at night. Yeshe’s aim is provide healthy and delicious food, to engage in the wider conversation around what we're eating and how this affects our physical and mental wellbeing.
Before our conversation I didn’t know Yeshe personally, however I’ve been a fan of the Freedom Loaf since first trying it many years ago at one of my favourite cafes when I lived in Auckland. Over the years I’ve seen The Midnight Baker pop up at cafes, retailers and social media and when I started this podcast I knew I wanted to talk to Yeshe and hear her story.
