As Chinese traditions go, few things are better than sitting around a steamy hotpot as autumn drapes a chilly cloak over North China.

深秋降临，围坐在热气腾腾的铜锅边，是中国人历来的传统，也是北方寒冻之日少有能及的美妙时刻。

Archaeological studies support the claim that Kublai Khan, the founder of the Yuan Dynasty (1271-1368), invented mutton hotpot.

考古研究显示，元朝开国皇帝忽必烈（1271-1368）开创了“涮羊肉”的做法。

The nomads relied on mutton during warfare, but in the frenzy of battle, Kublai Khan's subordinates had to make do with just dipping the mutton in boiling water to cook it for him.

战时，游牧民族依羊肉为济。然而战事狂猛，忽必烈的部下只能将就着把羊肉放在沸水里涮着吃。

For a long time, only Beijing's privileged, such as the aristocracy, could get their hands on mutton hotpot. It was very popular among the royal families of the Qing Dynasty (1644-1911). From the imperial food archives, Emperor Qianlong (1711-99) was a true hotpot lover, indulging himself with the bubbling dish more than 200 times in 1789.

此后很长一段时间里，只有京城内的皇权贵族才能享受涮羊肉。清朝（1644-1911）王室里涮肉盛行。据帝王膳食饮馔的相关文献记载，乾隆皇帝（1711-1799）偏爱涮肉，仅在1789年就食用两百次有余。

Among the smorgasbord of vegetables and meat spread out on the dinner table, mutton has been put in the front and center.

在各类果蔬肉鲜里，羊肉地位很高。

The public believes mutton has the therapeutic effect of warming the body, which makes it an ideal food for the colder months. Moreover, sheep are generally fattened up after a summer of voracious eating, making them ideal for seeing meat lovers through the winter.

人们认为，羊肉暖身，能以御寒，是寒冬腊月的上好食品。夏日一过，羊儿被饲养得膘肥体壮，也是爱吃肉的人们冬日里的绝佳选择。

Many folk customs favor mutton over beef in part because cattle were once considered more important as a means of production.

在古时劳作中，牛是更为重要的生产工具，因而民间习俗大多喜羊肉而非牛肉。

Currently, the capital city is home to more than 2,000 mutton hotpot restaurants.

目前，首都市内有两千多家涮羊肉店。

Traditional Beijing instant boiled mutton is known for its simplicity, to the point that many southerners would think of it bordering on tedium. It has no saliva-inducing hotpot soup but plain water infused with some scallion and ginger slices. In some more luxurious cases, Chinese desert thorn, dried mushrooms and shrimps are added.

传统的北京涮羊肉以清鲜爽口著称，正因如此，不少南方人觉得涮肉平平无奇。涮肉没有刺激味蕾，引人垂涎的火锅底料，只有少许葱姜和沸水，更高级一些的涮锅，还带些沙棘、干菇和虾仁。

Since 1996, Cai Shihong has stuck to the old-fashioned way at his Uncle Yang's Mutton Hotpot (Yangdaye) restaurant in Beijing.

自1996年以来，蔡世红开创的“羊大爷涮肉”便坚持传统的涮锅做法。

His business was small at first but was soon overwhelmed by legions of hungry customers.

起初只是小本生意，但很快，大批食客闻香而来，小店也不得不扩张。

From just six tables, Cai's mutton hotpot business has grown to six spacious venues in Beijing, Shanghai, Hubei province's Wuhan and Zhejiang province's Hangzhou.

一开始的六张小桌，现在的“羊大爷”成了驰名京、浙、沪、鄂的六户大店。

Outside business investors came knocking, offering franchise opportunities, but Cai refused most of them to ensure the quality of his product.

不少投资者慕名而来，提议“羊大爷”的特许经营，而蔡世红为了保证膳食品质，大都婉言谢绝。

"I strayed for a short period in the past, creating many new ways to prepare and eat mutton, some of which I even had patented," says the 64-year-old Beijinger.

"But it didn't go well," Cai admits, adding that the key to his success is keeping everything traditional.

The quality of the mutton plays a significant role in the hotpot experience, and quality control should be in place from the very start.

Frozen tofu, Chinese cabbage, vermicelli made from bean starch and baked pancakes are equally indispensable ingredients in authentic old-fashioned mutton hotpot.

冻豆腐、大白菜、豆浆粉丝和烤饼，是正宗老式涮羊肉里不可或缺的食材。

When the water boils, a dish of fatty slices from the tail is poured in to grease the pot, and then the mutton slices can be added. After the meat, it's time for frozen tofu, which will absorb the mutton soup and create an explosion of flavor on the palate. Then, cabbage leaves can be baptized in the brine to balance the taste and nutrition, easing the cloying of the rich, meaty flavors and making room for the last serving of the baked sesame pancakes.

The copper pot and ingredients, including sesame sauce, chili oil, pickled leek flowers and vinegar, also have to be present to complete the ritual.

In the old days, such restaurants only started serving mutton hotpot from Mid-Autumn Festival (the 15th day of the eighth lunar month). Business often waned after Spring Festival. And some staffers would have to find a new job after Dragon Boat Festival (the fifth day of the fifth lunar month), when business came to a halt. Today, however, mutton hotpot has become a perennial favorite to China's gourmands.

过去，涮肉餐馆只到中秋节前后才开张，春节过后生意渐趋冷清，端午节后关门，不少员工只能另寻新职。现如今，涮羊肉已是美食家们的常年最爱。

The technology development in mutton production has allowed for year-round supplies of fresh meat.

羊肉生产技术发展革新，现在全年都能供应新鲜羊肉。

"We have guests waiting in a long line during winter, and while summer sees such extreme demand drop off, our tables are still often fully booked," Cai says.

社评：美国用“民主”包装“台独”，用心险恶｜US challenges UN rules

The statement US Secretary of State Antony Blinken issued on Tuesday in support of Taiwan's participation in the UN system is the latest challenge to the one-China principle that the Joe Biden administration claims the United States respects.

周二，美国国务卿布林肯大放厥词，称“支持台湾有意义地参与联合国系统”。此举严重违背美国政府尊重的一个中国原则。

It is also a challenge to the integrity of the United Nations as Taiwan's participation would invalidate Resolution 2758 which the United Nations General Assembly adopted with an overwhelming majority on Oct 25, 1971.

此举亦是对联合国完整性的挑战。若台湾参与联合国系统，则联合国大会于1971年10月25日以压倒性多数通过的第2758号决议失效。

The timing of the issuance of the statement, one day after the 50th anniversary of the passing of the resolution which recognized the government of the People's Republic of China as the sole legitimate representative of China, once again highlights that the US will go to any lengths in its so-called competition with China.

五十年前，联合国承认中华人民共和国政府代表是中国在联合国的唯一合法代表。美方刻意在决议五十周年纪念日次日发表如此声明，再次说明美国正极力挑起与中国所谓的竞争。

The UN is not a personal club of the US. The call for Taiwan's participation in the world body is simply more grist for the mill in Washington's attempts to provoke Beijing.

联合国绝非美国的私人俱乐部。叫嚣台湾参与联合国系统的呼声，实则是美方对中方严重的政治挑衅。

It is intended to succor the secessionists on the island on the one hand, and to irritate Beijing on the other, seemingly in the hope that it will provoke a response from Beijing that would rally international support for the island and thus by default Washington's geostrategic designs.

此举一面支持“台独”，一面试图激怒中国，激起中央政府的反应，以求国际社会偏袒台湾，为美方的地缘战略设计铺路。

But to meet these ends, the US government has exposed its true colors. Despite its carefully worded statement, it has revealed to the world the extent to which it is willing to tear things apart to maintain its sense of superiority, no matter what the cost to others.

不过，为了达成目的，美国政府的真实意图昭然若揭。哪怕措辞多么谨慎，也藏不住美方为保持优越感不择手段，挑拨分裂，置别国的代价于不顾的丑恶嘴脸。

And let's be clear. No matter how far the island has gone in exercising the so-called democracy the US would like to identify itself with, no matter how indispensable the island has become in the global supply chains, and no matter how important it has become as a logistics hub, that does not entitle the island to independent participation in the UN system.

必须声明：无论台湾在行使美国认同的所谓“民主”方面走了多远，无论台湾在全球供应链中多么不可或缺，无论台湾作为物流中心的地位多么重要，统统不能赋予台湾独立参与联合国系统的权利。

Resolution 2758 is unequivocal on that. Despite the attempts of Washington and the island's ruling Democratic Progressive Party to pretend otherwise.

此点在联大第2758号决议中非常明确，不容争辩。不论美国政府与民进党如何混淆视听、颠倒黑白，都无济于事。

And despite any claims to the contrary, as an inalienable part of China, the island's rights and interests, ranging from public health to international cooperation for common development, are well-protected in the UN system by Beijing.

不论外界如何否认，作为中国不可分割的一部分，台湾省的合法权益，小到从公共卫生，大到国际合作、共同发展，均由中国政府在联合国系统予以保护。

Although the US government keeps reiterating that it upholds the one-China policy, what it is doing is trying to parallel Taiwan with China as an "independent state". In so doing, it is trying to create the impression that there is one China, plus Taiwan. It is a word game played in the hope that it will not have to put too many eggs in one basket.

而美国政府表面上一再重申坚持一个中国原则，背地里却将台湾作为一个“独立国家”看待，试图在国际上制造“一中一台”。此番操作也只是美方以便开脱所玩的文字游戏。

To reunify the island with the motherland is only a matter of time. In what way that plays out depends on the choices of stakeholders of the island, and what the costs will be depend on how far the US is willing to go to sustain the delusions of the island's secessionists.

祖国统一只是时间问题。统一方式取决于台当局的选择。而代价则要看美方愿意为“台独”的痴心妄想付出多少。

Inspired by Chinese jade ornaments, the official medals of the Beijing 2022 Olympic and Paralympic Winter Games were unveiled on Tuesday, 100 days ahead of the opening of the premier sporting event.

周二，在北京冬奥会开幕倒计时百天之际，北京2022年冬奥会和冬残奥会官方奖牌样式揭晓。其设计灵感来自于中国的玉饰。

After months of anticipation and secrecy, the organizing committee of the Beijing 2022 Games introduced the medals－dubbed tong xin, which means togetherness－during a ceremony marking the countdown to the opening of the event on Feb 4.

经过数月的保密，在万众期待之中，北京冬奥组委在距离2022年2月4日举行的北京冬奥会开幕倒计时百天仪式上公布了北京冬奥会和冬残奥会奖牌。该奖牌名为“同心”，寓意团结。

At around 8:30 pm when the countdown clock ticked down to 100 days, Vice-Premier Han Zheng, together with China's first Winter Olympic gold medalist Yang Yang and Olympic champion swimmer Zhang Yufei, unveiled a set of gold, silver and bronze medals for the 2022 Winter Olympics.

Engravings of cloud patterns, an element used on the torch of the 2008 Beijing Summer Olympics, snowflakes and ice markings fill the outer rings.

The concentric rings around the center of the medals represent the pursuit of unity and harmony, common in Chinese culture, while echoing the Olympic values of solidarity, inclusiveness and promoting peace.

The other side of the medals has the Beijing 2022 emblem at the center. The outer rings are dotted with 24 stars strung together by circles, representing the 24th edition of the Winter Olympics.

Sharing the same design, but with slight changes, the 2022 Paralympic Winter Games medals were also unveiled on Tuesday, with the International Paralympic Committee's logo carved on one side and the Beijing 2022 Paralympic emblem on the other.

"Hopefully, by enriching the Winter Olympic elements with Chinese characteristics, we can leave a Chinese mark on the promotion of the Olympic spirit and build more excitement around the opening of the Games," said Cai Qi, secretary of the Beijing Municipal Committee of the Communist Party of China and president of the organizing committee.

The Beijing 2022 medals were designed by a team led by Hang Hai, an associate professor at the Central Academy of Fine Arts, who also came up with the idea to inlay jade rings in the 2008 Summer Games medals.

Drawing inspiration from jade for a second time honors the Chinese capital's unique status as the first city to host both the Summer and Winter Olympics, said Hang.

杭海表示，这是第二次从玉中汲取灵感，彰显了北京作为奥运史上首座双奥城市的独特地位。

"To inherit the concept of the 2008 medal design is one of the principles we set ourselves approaching the design for Beijing 2022," said Hang. "Visually, it looks quite simple and plain at first glance, while details such as the carving of clouds and snowflake patterns as well as the uneven casting on the surface have made it special."

杭海表示：“继承2008年奖牌设计理念是我们在设计北京2022年冬奥会奖牌时制定的原则之一。乍一看，这一设计非常简单朴素，但祥云和雪花图案以及表面凹凸不平的铸件等设计细节让这一奖牌显得尤为独特。”

The medals will be produced by the Shanghai Mint, the same coinage company that manufactured the 2008 medals.

Also unveiled at the ceremony were medal cases, made from bamboo, and the lanyards with Olympic rings and "Beijing 2022" embroidered on ribbons made from silk. The theme song for medal ceremonies at the Games, Salute to the Warriors, was also introduced to the public.

Yang Yang, the former Olympian and chairwoman of the Beijing 2022 Athletes' Commission, said the unveiling of the medals will further motivate athletes to fight hard for podium finishes at next year's Games.

All 12 competition venues were completed by the end of last year. An Olympic qualifying event, the Beijing leg of the International Skating Union's short-track speedskating World Cup series wrapped up four days of competition in Capital Indoor Stadium on Sunday. Some of the world's top skaters said they were impressed by their experiences on and off the ice.

With 10 international test events to be staged through December, the Beijing 2022 organizers will continue assessing a series of COVID-19 countermeasures in real-time practices to ensure their seamless implementation next year.

According to a "playbook" on COVID-19 safety measures released on Monday, all Games participants, including international athletes and officials, will have to be fully vaccinated before landing in China; otherwise they will need to undergo a 21-day hard quarantine upon arrival.

The recent resurgence of COVID-19, which has hit 11 provincial regions and has lead to at least 106 infections in 13 tour groups, is believed to have been caused by an imported case, health officials revealed on Sunday.

卫生官员周日透露，本轮疫情已经袭击了11个省级地区，并造成13个旅行团中至少106人感染。据信本次疫情是由境外输入源头引起。

"Most cases reported in the recent wave were caused by the Delta variant and related to tourism. The origin of the virus is still under investigation," said Wu Liangyou, deputy director of the National Health Commission's disease prevention and control bureau.

So far, the new wave has hit 11 provinces and regions, including the Ningxia Hui and Inner Mongolia autonomous regions, Shaanxi, Yunnan and Guizhou provinces and Beijing. A total of 133 cases are so far involved－including the 106 from the tour groups－most in Gansu province and Inner Mongolia.

By Saturday, Northwest China's Gansu province had logged 41 confirmed locally transmitted cases. Of them, 30 are in Lanzhou, seven in Zhangye, two in Jiayuguan, one in Tianshui and one in Longnan.

The province has suspended all tourist activities in a circuit-breaker measure after the spike in cases, with all tourists in Lanzhou, where most cases were reported, required to stay wherever they are under quarantine.

All 10 cases have been sent to designated hospitals for treatment, and an epidemiological investigation is underway.

Public exhibitions of the torch and the traditional national relay in the host country have been streamlined for the Beijing Games due to COVID-19 precautionary measures.

Games events are scheduled in three zones－downtown Beijing, the capital's northwest Yanqing district and co-host Zhangjiakou in Hebei province.

Due to the pandemic, Games organizers have cut back the traditional torch relay to a small-scale event. The relay will take place in three host areas and involve about 1,200 torchbearers due to COVID-19 containment protocols.

由于疫情原因，北京冬奥组委已精简传统的火炬传递活动规模。受新冠肺炎疫情防控方案限制，火炬传递将在三个赛区进行，约1,200 名火炬手参与传递。

The relay is scheduled for Feb 2 to Feb 4, with the route connecting landmarks, historical sites and major tourism attractions in Beijing and Zhangjiakou. The culture and warm hospitality of the hosts will be on display, the organizing committee of the Games said.

An online version of the torch relay making use of virtual reality and augmented reality technologies is also planned for social media platforms, with the details yet to be announced.

Wang Xiangyu, a deputy director of Beijing 2022's culture and ceremonies department, said, "Although the length and duration of the torch relay has been reduced, this represents an innovative approach to maximize the benefits of the technology in connecting more people in an interactive way.

Beijing strengthened epidemic control and prevention measures on Tuesday as one new locally transmitted COVID-19 case was reported following more than two months of zero local cases recorded in the city.

周二，北京在连续两个多月零本土新增病例后，新增1例京外关联输入本地新冠肺炎确诊病例，随后该市加强疫情防控措施。

The patient in the case, found in Fengtai district, was a close contact of a recently confirmed case when they boarded train K42 from Dunhuang, Gansu province, to Beijing.

据悉，该病例出现在丰台区，是最近乘坐甘肃敦煌开往北京的K42列车确诊病例的密切接触者。

The contact arrived in Beijing on Saturday and reported to the local community after learning the confirmed case on Monday.

"The patient was sent to a hospital, and the local authority has closed the related areas and started epidemiological investigation," said Zhang Jie, deputy head of Fengtai district, at a news conference.

Pang Xinghuo, deputy director of the Beijing Center for Disease Control and Prevention, said at the news conference that no people in Fengtai should leave Beijing unless it's absolutely necessary. Those who must leave the city will need to show a negative test result within the previous 48 hours and a green health code, according to Pang.

Five cases were reported in Ejine Banner in Alxa League, and two were reported in the city of Ereenhot in Xiliin Gol League, the regional health commission said in a statement.

Two of the eight were confirmed as being infected in Xi'an on Sunday, while four others were confirmed on Monday, and one was an asymptomatic carrier.
