“You have to customize what you eat according to your health and your tolerance.” - Sally K. Norton
Oxalates are naturally-produced chemicals that can be found in a variety of sources and plant foods like spinach and sweet potatoes. When consumed, oxalate crystals can deposit in different areas of the body, including the thyroid, and cause a cascade of adverse effects.
Today I’m super excited to be joined by Sally K. Norton, author of "Toxic Superfoods," about the impact of oxalates on the body. Sally holds a nutrition degree from Cornell University and a master’s degree in Public Health. Her path to becoming a leading expert on dietary oxalate includes a prior career working at major medical schools in medical education and public health research. Her personal healing experience inspired years of research that led to her book, Toxic Superfoods, which was released in January 2023 from Rodale Press and is available everywhere books are sold. As a leading expert on oxalates in food, Sally’s work has been featured by podcasters, radio shows, and several online and print journals. Her website is https://sallyknorton.com.
In this conversation, Sally and I delve into the prevalence of oxalate crystals in the thyroid gland, the connection between oxalates and health issues such as kidney stones, tips for reducing oxalates in the diet, the challenges of restrictive diets, and more. Enjoy the episode!
