This recipe is so simple but absolutely delicious !
Chicken, broccolini & cashew Pad Thai (serves 6)
200g Boneless skinless chicken thighs, cut into large chunks
Marinate2 tbsp soya sauce1 tsp sesame seed oil2 tbsp tamarind sauceCombine all the ingredients and refrigerate.
Pad Thai1 pkt broccolini shoots, sliced into 5 cm lengths½ pkt rice noodles (soaked in boiling water for 5 minutes then drained)½ cup coriander, roughly chopped2 cloves garlic, crushed1 small onion, peeled and sliced2 tbsp soya sauce2 tbsp tamarind sauce2 tbsp peanut butter½ cup coconut cream2 tbsp cooking oil¼ cup cashewssalt and pepper
Heat a large wok or large frypan on a low heat, add a touch of oil and fry chickenuntil cooked through. Remove and rest.
Place the onions and garlic into the fry pan and continue to sauté till soft.
Add in the broccolini followed by the combined cup of soya, tamarind, peanut butter and coconut. Once boiling add the drained rice noodles, chopped coriander, cooked chicken and finally the cashews.
Serve!
