    It should have been one of the happiest times of Yu Te Tseng’s life. But Tseng, the father of the world’s best male junior tennis player, lowered his head and put his right hand to his eyes, trying to stem the flow of tears.

    He was sitting in a garden at the United States Open in September after his son, Chun Hsin, had won another big match. But while a friend patted him on the back, Tseng needed more than a minute to compose himself and explain his sadness.

That is how the professional player has to do it.”

    Eigo Shinoda, a former shipbuilding executive and fighter pilot in World War II, spends his days in a wheelchair and has trouble eating solid food. But that was no impediment as he dug into his meal with a plastic turquoise spoon recently.

    Kaze no Oto, in a suburb of Yokohama, is one of a few restaurants in Japan catering to an aging population with meals for those who have difficulty chewing or swallowing. In the way that restaurants have long offered children’s menus, some are now offering special senior meals, too.

    In Japan, companies are developing special thickening products that can be added to meals during preparation to alter the texture of various foods and ease swallowing. In a culture where meals are prepared with great care and artistry, the thickening gels make it possible for chefs to reshape the food into visually pleasing dishes.
     
    At the Mutuai nursing home in Yokohama, nutritionists and chefs experiment regularly so that they can offer residents a variety of meals.

    On a recent afternoon, the lunch menu was Japanese sea bass and sweet-and-sour marinated carrots and radishes, with a side dish of spinach and mushrooms. To adapt the meal to those with slight swallowing problems, the kitchen staff substituted flounder, a more tender fish, and removed the mushrooms and stems from the spinach.
     
    For the residents who have more severe swallowing issues, the staff sent the meal through a food processor, adding a gel powder before cooking the pureed versions in vacuum-sealed plastic bags. Then the resulting gelatinous blocks were poured into molds so that the chefs could create meals that looked like a piece of fish accented with slices of carrots and radish.
     
    在最近一個下午,午餐菜單有日本海鱸魚、酸甜口味的醃胡蘿蔔和蘿蔔,配菜有波菜和香菇。為照顧輕微吞嚥的老人,廚房工作人員幫這些人換上肉質更嫩的比目魚,並拿掉香菇和波菜的梗。

    The 94-year-old man had come for lunch at a Chinese restaurant, and he was determined to make the most of his squid and leek stir-fry.
     
    Eigo Shinoda, a former shipbuilding executive and fighter pilot in World War II, spends his days in a wheelchair and has trouble eating solid food. But that was no impediment as he dug into his meal with a plastic turquoise spoon recently.
     
    這位94歲的男士來到一家中國餐館用午餐,他打定主意要盡情享受他的韭菜炒墨魚。

    That’s because the staff at the restaurant, Kaze no Oto, had pureed the stir-fry in a food processor and served it to his group, which was from a nearby nursing home. While it didn’t look that appetizing, it did the trick for Shinoda. He finished by licking his plate clean.
     
    Kaze no Oto, in a suburb of Yokohama, is one of a few restaurants in Japan catering to an aging population with meals for those who have difficulty chewing or swallowing. In the way that restaurants have long offered children’s menus, some are now offering special senior meals, too.
     
    那是因為這家kaze no Oto餐廳的工作人員,用食物調理機把韭菜炒墨魚打成了泥,供給他們這群住在附近養老院的人享用。雖然這道菜泥看起來不怎麼開胃,但對筱田來說,這一招很成功,他把盤子舔得一乾二淨。

Household sanitary paper manufacturers have this year discovered that 3-ply toilet tissue has emerged as a force to be reckoned with within the market, with sales volumes jumping 20 percent. Toilet tissue impregnated with balsam and forest-friendly, recycled alternatives have all exhibited strong sales performance. The industry is speculating that Taiwan is gradually moving toward becoming an M-shaped society, as consumer purchasing power becomes more polarized.

    Household sanitary paper manufacturers have discovered that 3-ply loo paper is selling like hot cakes. For example, for US wholesaler Costco, in addition to its own-brand Kirkland toilet paper, other 3-ply offerings from Kleenex and established brand May Flower, have all been selling well. According to papermaking conglomerate YFY, although 2-ply toilet paper still constitutes the bulk of the market, sales volumes of 3-ply have been gradually increasing, with some lines becoming best-sellers. Papermakers are now rushing to ramp up production and supply of 3-ply.

    According to YFY, in 2016 sales revenue for 3-ply toilet paper totalled NT$870 million but broke the NT$1billion mark last year: a year-on-year increase of nearly 19 percent and 16 percent market share.
     
    永豐餘指出,二○一六年台灣市場三層衛生紙銷售金額僅八.七億元,二○一七年已突破十億元,年增近百分之十九,且在衛生紙產品的占比提升至百分之十六。
     
    This year, YFY launched a premium 3-ply version of its flagship May Flower toilet paper to appeal to consumers who demand a superior quality feel and softness. Cheng Loong Corp, which markets a top-of-the-range 3-ply extra-thick, 50-percent-more-absorbent toilet paper under the Andante brand, has seen a 20 percent increase in sales of the product since the beginning of this year.
     
    永豐餘今年就主打旗下「五月花」三層衛生紙,訴求高質感、柔軟的特性。正隆的「春風」三層衛生紙,則主打「三層厚手、吸水力提升百分之五十」,今年以來銷售量大增二成。
     
    As for the cause of mushrooming sales of 3-ply toilet paper, the industry believes Taiwan’s consumer market is becoming “M-shaped.” Although many Taiwanese consumers still count every penny, consumers on the right lobe of the “M” curve attach a greater degree of importance to quality, the environment and functionality, and are willing to fork out more cash to buy products perceived to be of a higher quality.
     
    對於三層衛生紙銷售成長的主因,業者認為,台灣的消費市場出現M型化趨勢,雖然有不少消費者仍對價格錙銖必較,但在M型右方的消費者更重視品質、環保、功能等,願意花較多的錢買品質更好的產品。

The marketing executive decided to build his own, even though he knew this was going against tradition. His family threw their support behind him, and within less than a month he had constructed an abode complete with hot springs, all for his deceased father-in-law.

    Burning paper models — from cars to houses — is a common folk practice at funerals in Taiwan. Many believe that the spirit world mirrors the human world, and so the dearly departed need a place to live, food to eat and money to burn. Setting alight in a ritual manner these kinds of paper objects transports them to the spirit world, which keeps the ghost of the departed happy and brings luck to the living.
     
    燒紙紮模型──小至紙紮車,大如紙紮屋──是台灣告別式中常見的民間習俗。許多人相信,陰間就像是人世的倒影,所以往生的摯愛也需要一個住的地方、吃的食物,以及夠他們燒的錢。點燃紙紮物的儀式能把這些物件傳送到陰間,讓往生後的鬼魂開心,給活著的人們帶來福氣。
     
    “The tradition dates back to the Tang dynasty,” says Tseng Kuang-hsing, owner of Jixing Paper Art Co. Tseng began building paper model houses 40 years ago when he was 16, a time, he says, when the industry was dominated by Taoist monks and priests.
     
    吉興紙藝有限公司的師傅曾光興表示:「這項傳統技藝最早可以追溯到唐代。」四十年前,十六歲的曾師傅就開始「建造」紙紮模型房屋。那時候,曾師傅說,整個產業都是由道教的道士跟法師掌控。
     
    Tseng oversees a staff of six employees at two different workshops on a narrow street in eastern Taipei. In the older of the two workshops, three craftspeople build traditional paper houses using long strips of bamboo for the structure and large pieces of paper with different patterns that can be found at any temple in Taiwan.
     
    在台北東區的一處狹小巷弄裡,曾師傅監督著兩間不同工作室的六名員工。在比較舊的那間工作室中,三名工匠運用細長的竹枝搭出傳統紙紮屋的結構,再貼上大張的紙,紙上印的各式圖案都可見於台灣各地的廟宇。
     
    Deities from the Chinese pantheon adorn the larger of the paper houses, which range in price from NT$3,000 to NT$30,000. “The older generation prefers this style,” Tseng said, adding that it typically takes two days to construct the larger models.
     
    比較大的紙紮屋會飾有各路神祇,價格從新台幣三千元到三萬元不等。曾師傅指出:「老一輩的比較喜歡這種風格」。他也補充說,蓋這種比較大的模型通常需要兩天時間。
     
    Across the street at Tseng’s second workshop, younger staff assemble more refined houses. Considerably smaller than the traditional houses (NT$25,000), these are two and three-story mansions (NT$55,000) as well as a Japanese-style bungalow (NT$20,000). These houses take between seven and 10 days to complete. There are no bamboo frames supporting these houses. Instead, the interior of each resembles that of a suburban North American home. Each room is meticulously designed and crafted. Some, for example, have a sofa in front of a fireplace, a canopy bed in the master bedroom or a kitchen complete with refrigerator and stove.
     
    巷弄的另一邊則是曾師傅的第二間工作室,年輕的員工們在裡面組裝著更精緻的房子。這類模型比傳統紙紮屋(新台幣兩萬五千元)小非常多,可以做出兩到三層樓的透天厝(新台幣五萬五千元)以及日式平房(新台幣兩萬元)。新式紙紮屋普遍要花七到十天才能完成,不再用竹枝搭成支撐的框架。取而代之的是,新式紙紮屋的室內設計像極了北美郊區的房屋,每個房間的設計都一絲不苟、手藝精巧。舉例來說,有一些紙紮屋的壁爐前方會放上精雕細琢的沙發,主臥房擺的是附有頂篷的四柱床,或是附有冰箱和烤爐的完整廚房。
     
    With modernization of the industry has come an explosion in the products on offer. Tseng’s glossy catalog shows items such as desktop computers (NT$3,000), a mahjong set (NT$1,500), a scooter (NT$3,500) and an airplane (NT$3,000), all made of paper. For the crooner in life, there are karaoke machines (NT$1,500). If things in the spirit world heat up, air conditioners can be purchased for NT$2,500.
     
    隨著該產業邁向現代化,它們能提供的產品類型也呈現爆炸性增長。曾師傅誇張的商品型錄中包括桌上型電腦(新台幣三千元)、麻將組(新台幣一千五百元)、輕型摩托車(新台幣三千五百元),一架飛機(新台幣三千元),通通都是用紙做的。對於生前嗜愛唱懷舊金曲的人,這邊也有卡拉OK機(新台幣一千五百元)。如果陰間開始暖化,你也可以用新台幣兩千五百元買到一台冷氣機。

Each room is meticulously designed and crafted. Some, for example, have a sofa in front of a fireplace, a canopy bed in the master bedroom or a kitchen complete with refrigerator and stove.
