After years of struggling with a severe eating disorder, Nicole began to use instagram as a diary to share recipes of food that she was creating on her healing journey to share how intuitive eating led to food freedom. 

Today the Kale Junkie community spans over 3.5 million followers across social media platforms and she is regularly featured on news outlets and various media.
