After years of struggling with a severe eating disorder, Nicole began to use instagram as a diary to share recipes of food that she was creating on her healing journey to share how intuitive eating led to food freedom. 

Today the Kale Junkie community spans over 3.5 million followers across social media platforms and she is regularly featured on news outlets and various media. Nicole's journey is one of resilience, tenacity, and believing in yourself enough to get to where you want to be, both professionally and personally. Tune in!
