  • Aussie icon John Farnham coming to New Zealand
    Throw another prawn on the barbie and crack open a can of VB, (or a XXXX Gold to show your support for Queensland!)
    Today is Australia Day and to celebrate all things truly Aussie, a special guest joined Saturday Mornings with Jack Tame.
    John Farnham has been a beloved part of the Australian music scene for more than 50 years, releasing 19 studio albums, 19 compilation albums and 74 singles in that time.
    Now, he’s coming back to New Zealand playing stand-alone shows in Auckland and Wellington and opening for the Eagles in Dunedin in March.
    John Farnham told Jack Tame he has got to the stage in life where he wants to take it easy, and the New Zealand shows are a perfect way of still performing without being exhausted afterwards.
    “I am on the same bill as The Eagles so why wouldn’t you take up the offer! I love working at outside venues like wineries, its a different type of vibe and its good fun.
    "I’m 70 years in July, so I kind of do weekend work now and I just couldn’t resist doing a show like this.”

  • Nici Wickes: Plum Kasundi recipe
    Kasundi is an Indian chutney usually made with tomatoes but here I’ve adapted the recipe from my second cookbook, Cook Eat Enjoy, and made it with plums instead of tomatoes and it’s fabulous!
    Makes about 5-6 cups
    3/4 cup vegetable oil
    1/4 cup each black mustard seeds and cumin seeds
    200g grated fresh ginger
    100g crushed garlic
    2.5 kg plums, chopped
    400g sugar
    2 tbsp tumeric
    3 tbsp chilli powder
    500ml malt vinegar
    2 tbsps ground coriander
    3 tbsp salt
    In a large pot heat the oil and add the mustard and cumin seeds until they pop. Reduce the heat and add remaining ingredients. Give it a decent stir and simmer uncovered about 1 ½ to 2 hours, stirring regularly or until lovely and thick. Pour into jars and seal.
    Note: The amount of chilli may seem excessive but the sugar tempers it I promise!

  • Nici Wickes: Little courgette and currant cakes with cream cheese icing
    If you’re a gardener then chances are you’re racing to keep ahead of the courgettes right now! Try these little cakes which are so light and fluffy and the currants studded through them serve as little bursts of tartness that pick up the palate.
    Makes 12
    200g caster sugar
    1 cup sunflower oil
    3 medium eggs
    275g plain flour
    2 tsps baking powder
    1 tsp mixed spice
    1 tsp baking soda
    Zest from one lemon
    400g grated courgette (3-4 medium-sized courgettes), squeezed to release some of the excess juice
    ½ cup currants
    Icing
    150g cream cheese
    30g butter
    2 cups icing sugar
    Lemon zest to garnish
    1. Pre-heat the oven to 210°C. Grease the holes of a 12-hole standard muffin pan.
    2. Beat the caster sugar, oil and eggs together until the sugar is dissolved, then fold in the flour, baking powder, mixed spice, baking soda, and salt. Finally, mix in the courgettes and currants.
    3. Two-thirds fill the muffin holes and bake for 15-20 minutes. Cool in the pan for five minutes before removing to a wire rack.
    4. Beat together cream cheese and butter until smooth. Stir in 1 ½ cups icing sugar and mix until combined. Add remaining icing sugar to get desired consistency.
    5. When cakes are cooled, ice with cream cheese icing and lemon zest.
