  • Nici Wickes: Chocolate & raspberry slice
    In the midst of winter we all need 2 things; a reminder of summer and chocolate! I guarantee this chocolaty slice with vanilla and freeze-dried raspberries will do the trick nicely.
    Makes 20-24 pieces
    Base
    180g butter
    2 tbsps golden syrup
    150g brown sugar (about 1 cup, loosely packed)
    2 cups oats
    1 cup wholemeal flour (can use plain)
    1 cup desiccated coconut
    3 heaped tbsps cocoa
    2 tsp baking powder
    Topping
    3 tbsps butter
    1 ½ cups icing sugar
    1 tbsp lemon juice
    Small handful of Fresh As freeze-dried raspberries (available in supermarkets)
     

    Preheat oven to 160 C. Line a sandwich tin with baking paper.
    Make the base by melting together the butter and golden syrup. In a bowl mix the remaining ingredients together. Pour in melted butter and sugar and mix well. Press firmly into prepared tin in an even layer. Cook for 25 minutes.
    Make topping by creaming together butter, sugar and lemon juice until smooth and paste-like.
    Once base is cooked and whilst still slightly warm, spread topping and sprinkle with raspberries.
    Slice when completely cold.
    Stored in an airtight container, this slice will stay fresh for about a week.

But by the end of the album you’re seduced.  And while this album is more homogeneous and less risky than others he keeps on surprising.  Might As Well Dance is a very interesting hybrid of country and soul with a tremendous little guitar break.  He’s sort of inventing a new genre.  Fans are going to love this.  8/10
