  • Nici Wickes: Ultimate bacon buttie
    A Bacon & Egg Buttie for DadMy favourite bacon butties have a lovely chive-spiked omelette tucked in there as well as crispy bacon, mustard and relish. Make these for dad this Fathers’ Day.
    Streaky bacon – allow 2-3 rashers per person
    1 tbsp maple syrup
    Fresh eggs – ½ per person
    Chives, chopped finely
    Salt & pepper to season
    Splash of water
    Butter
    White bread - 2 slices per person
    A good relish or tomato sauce
    A swipe of wholegrain mustard

    Roll each bacon rasher up and place on a tray to cook under a hot grill – you can cook a lot at once like this. Cook until getting crispy then turn and cook other side.
    Whisk eggs with chives and seasoning and a splash of water. Heat a pan to medium and grease it with some butter. Pour in enough of the egg mixture to make a thin omelette. Make a few batches until you’ve used all the egg mixture. Keep omelettes warm.
    Unravel bacon and cook in the pan on medium until crispy, adding a small of splash maple syrup towards the end and cook until sticky.
    Toast the bread and butter. Wipe one slice with mustard and top with bacon, some omelette (cut to fit), a dollop of relish and another piece of toast. Cut the buttie, always cut the buttie!    

    Tip:
    There’s some tips and tricks to cooking a lot of bacon well; I prefer grilling the bacon first then finishing in the pan, adding a dash of maple syrup towards the end of cooking (it transforms bacon with it’s caramelised flavour) and always buy the best quality bacon you can afford.LISTEN TO AUDIO ABOVE

  • Jack Tame: My top secret visit to Team NZ
    It’s amazing how fast technology moves in the America’s Cup.
    A boat which just two years ago was top secret, cutting edge, state of the art, the clandestine culmination of millions of dollars in innovation and design, is now bolted in place for the whole World to see outside of Emirates Team New Zealand’s base.
    “Why would you do that?” I asked Grant Dalton.
    Think about it.. he said. The cycling grinders. The crane you need to take it in and out of the water. The temperamental nature of the AC50s and the exhilarating racing. There are only a handful of people in the World who can safely sail the boat and they’ve all had to move on. So unlike the old 90s monohulls the winning boat from Bermuda isn’t good for anything today except a bit of decoration. 
    Grant Dalton gave me the tour inside.
    We started in the design room rows of engineers sitting at their screens. Most of them he explained, don’t come from sailing backgrounds. Many of them know next to nothing about boats. They’re mainly aeronautical engineers mathematicians who are experts in drag, streamlining, and aerodynamics. They could be designing cars or planes, but they’re designing what they hope will retain the America’s Cup. 
    On the ground floor. An impressive gym with a line of grinding machines. The men who will power the boat are training twice a day, then picking up tools and working on the boat in between their sessions. Keep in mind the America’s Cup will run on hydraulic power. So they’re not just grinding when their tacking or gybing. For the next cup, they’ll stand in a hollowed out part of the hull... they won’t even have to changes sides and run across the deck. They’ll spend the entire race with their heads down, pumping their arms. The morning I arrived, they’d just finished a 90 minute endurance grind. They’d recorded their numbers, showered off, and hit workshop floor. It’s a good thing our grinders are all pretty handy.
    Next door a room with a locked door and a Top Secret warning. A sign telling visitors and staff that no photography or recording is allowed. I’ll give you a quick gizz said Grant. What did I see? I can’t tell you. I’m sorry! I can’t tell you.
    But then, we walked out onto the main workshop floor... and there she was. The first full size boat for Team New Zealand’s America’s Cup defence. Sleek and elegant, in a way that only single hull sailing boats can ever be. There were two massive slots on the side for the foiling arms. The hole where the grinders will shelter. And a position up the back from where Peter Burling and Blair Tuke will run the show.
    ‘Think about how fast the Cats went in Bermuda’ said Grant.
    ‘This thing will finish a race six minutes faster.’
    Later this week, the whole World will see Team New Zealand launch boat one for their America’s Cup defence. They’ll practice in it, make some adjustments and produce one more vessel. And that’ll be it.
    “The cup feels like it’s a long way away’ said Grant, staring up at the new cutting edge.
    “The funny thing is, it’s already been won and lost.’

    Hidden power usage
    Ok, we turn off the lights when you leave the room, use efficient light bulbs. But did you know, when you turn off your machines, computer, printer etc - if it is still on stand by mode it is still using as much as 15 to 20 watts? Studies of homes say standby mode uses 10% of all energy. This is the hidden price of a little more convenience. 
    Paper
    55 percent: the amount of water saved by producing recycled paper as compared to virgin paper. Recycled paper also takes 60-70 percent less energy to produce than paper from virgin pulp.
    Do you need to print that? Is your machine set to print both sides as the default? Can you use one sided printed paper as your note paper for random thoughts and spontaneous mind maps? I kept a folder on my desk just to store this used paper.

    * Bring your own, and promote discussion of good food. * Don't eat el desko, eat with others. Introducing shared meals once a week was the best thing I did at ecostore.* If you bring food in from local cafes, take your own reusable containers like tupperware instead of the single use containers you usually get with takeaway.

  • Ruud Kleinpaste: What you didn't know about eggs
    As sure as eggs
    In the Gardening world there are a lot of mysteries and good tips, best practices and “proven techniques” that are the biggest urban myths on the planet. Using egg shells is one of the top contenders for the mis-use of science prizeRobert Pavlis (Blogger from North America) nicely summed up the various hopeful claims around this calcium/sulphur/magnesium/potash/sodium/organic matter – containing material.
    Of course, all these minerals and nutrients are very useful for plants, when they break down. Problem is: it takes a long, long time to break down an egg shell!! People that throw egg shells into compost heaps know that. The only way they work is by grinding them into a fine powder. How about using it as a mulch (looks nice – light, reflective colour), to suppress weeds and keep moisture in the soil?  
    Yep – no doubt would work well, but just calculate a layer of mulch, say 2 to 3 inches thick: how many tons of egg shells will you need? And… do you live near an egg-processing plant?
    Egg shells as as organic pest prevention/control? Crushed egg shells become an almost white powder that may look like diatomaceous earth (But isn’t)
    Some folk believe it has the same properties as diatomaceous earth and would assist in killing beetles, caterpillars, larvae etc. The crushed egg shells are totally harmless to these creatures.
    Here’s a trial I did with a snail crossing a new Stanley blade.
    Blossom End Rot? Just add egg shells under the tomato plant to prevent it?
    Blossom End Rot in tomatoes is said to be caused by calcium deficiency – yes and no: more precisely it’s a problem of the plant not moving the calcium to the developing tomato fruit; often caused by irregular watering. Adding egg shells is not going to remedy that!
    Best thing to do with egg shells? Crush them and feed them to the birds: they can use the calcium to create their own egg when they are ready to reproduce
    Some gardeners still believe that crushed eggshells are too sharp and hard for the soft feet of slugs and snails, thus providing an effective barrier for these molluscs around your lettuces etc.
    Molluscs never have direct contact with the substrate they glide on: they glide on their slime!
