75g butter, softened2 ripe bananas 125mls apple juice 2 eggs 1 1/3 cups plain flour2 tsp baking powder 1 tsp cinnamon ½ tsp ginger Pinch nutmeg1/3 cup milk½ tsp baking soda
1. Preheat oven 170 C and grease a 12-hole muffin tin well.2. Beat/cream butter until pale and creamy. Add in banana and beat until mixed in. Add apple juice and eggs and beat until combined. Stir in flour and baking powder and spices until just combined.3. Dissolve baking soda in milk and stir this into batter.4. Spoon into muffin holes to ¾ full.5. Bake for 20 minutes until spring back to touch. 6. Ice with vanilla icing if you wish.
Note: Baking without refined sugar
If you’d like to up the nutritional factor in your baking try replacing white sugar with pure apple juice. It will work for most cakes and batter-based baking if you follow this simple rule: For every cup of white sugar in the recipe, substitute 3/4 cup of the juice and reduce the amount of other liquids in the recipe by three tablespoons.
