Passionfruit originate from Brazil and northern Argentina and though there are over 500 varieties we’re most used to the wrinkly purple ones in NZ.
They’re healthy, boosting immune function, lowering blood pressure, improving sleeping habits and bone mineral density.

Biscuits
230g butter, softened
1 tsp vanilla extract
70g icing sugar
230g plain flour
75g cornflour
4 passionfruit
Butter cream
100g butter
120g icing sugar
Pulp from 1-2 passionfruit
Preheat oven to 150 C. Line 2 baking trays with baking paper.
Cream butter, vanilla and icing sugar until pale and creamy. Stir in sifted flours and mix until it comes together. Stir in passionfruit pulp.
With cold, lightly floured hands roll tablespoonfuls of mixture and place on tray, leaving 3cm between each. Flatten with floured fork.
Bake for 15 minutes or until beginning to brown I always overcook mine!). Leave to cool on tray for 5-10 minutes then transfer to wire rack to cool.
Beat buttercream ingredients together until smooth and fluffy – about 4 minutes beating.
Sandwich together with buttercream and chill to set.
Dust with icing sugar.
