I first tried this dish on a visit to Bali over 20 years ago and I have loved it ever since.
Ingredients
1 cup shredded cabbage ½ cup beans – cut into manageable size pieces ½ carrot sliced thinly ½ cup cauliflower or broccoli cut into small pieces1 cup bean sprouts½ cup cucumber, sliced into half rounds2 eggs hard-boiled and sliced10 prawn crackers (optional)
Method
Bring a large pot of lightly salted water to a boil. Blanch the beans, cauliflower (or broccoli) and carrots for 2 minutes. We want them to be tender but still crisp – definitely not mushy. Drain and rinse in cold water.
Pile the vegetables in the middle of the serving dish with the bean sprouts on top and garnished with cucumber slices and boiled eggs and prawn crackers in the side.
Pour peanut sauce (recipe below) over the vegetables and serve.
Peanut Sauce
Lots of versions of peanut sauce are made with peanut butter. Don't do it! It's far too sweet and has very little authenticity to it. Instead use the recipe below and store it in the fridge. It's super easy and quick to make. It can be used for a dip for veggies, a sauce for meats and for Gado Gado.
1 cup dry roasted peanuts⅓ cup water2 cloves garlic, minced½ tsp dark soy sauce2 tsp sesame oil2 Tbsp brown sugar2 Tbsp fish sauce½ tsp tamarind paste1 tsp red chilli sauce (more or less to taste)squeeze of fresh lime juice (about 1 tsp)
Method
Place all ingredients in a food processor and blend until smooth.
Heat 2 Tbsp oil in a small pot and add the paste. Fry and then bring this to the boil and allow to simmer for 5-10 minutes. Adjust the consistency by adding water.
