这一集,咱们来谈谈在北美与吃十分相关的一个话题,那就是美国一大习俗——小费。小费是怎么来的,又是怎么成为美国的一个普遍习俗的,而当今小费又存在着哪些新现象,就在这集的世界好好吃。。。
说起小费这一概念,相信大家都不陌生,它是一个极具北美特色的东西。在美国服务业,从餐饮,理发到泊车,约定俗成付给为你服务的人一定数量的在账单之外的费用,这就是小费。小费已经形成了美国服务业的独特的一面。那小费的历史是怎么来的呢?
它真正的来源就如同美国的其他这个主流文化一样,还从欧洲来。在 19 世纪,南北战争左右,第二次工业革命展开,制造业兴起,在美国开始出现了很多新一批的富人。尤其在北部的美国。这些新兴的有钱人的休闲娱乐不会在本地,因为美国当初的基础建设还差得很,所以多选择去往欧洲度假。

那个时代欧洲的基础建设好很多,服务也好,远远超于美国。去巴黎、去伦敦、去维也纳、去罗马,这种去往欧洲度假的方式,在当初的美国富人圈子之中形成了一个潮流。

在欧洲之后,美国人发现当初的欧洲的旅店也好饭店也好,当地的有钱人在用完餐后,会给他服务的人一定的小钱。这个习惯在不同国家都有,比如在英国伦敦的咖啡馆当客人坐下来等待咖啡的时候,有钱的顾客会在桌子边放一些零钱,用来加速服务的。据说这种习惯来自古罗马,在罗马时代去做客,如果有仆人为你服务,那么高人一等的罗马公民,在离开时应该付给主方仆人一些小钱,来彰显身份的高低与对主人家的尊重。
美国这富起来的新一代们便开始把这种具有欧洲范儿的行为照猫画虎带回到北美。
在开始之初的那个时代的美国,给小费会被当做你在彰显优越感,开始是遭到很多人不齿的。是对服务人员的一种冒犯。所以这种做法刚开始并不流行,会遭到白眼。
那具体是怎么流行起来的?在南美战争结束之后,随着越来越多的黑人非洲裔美国人劳动力被释放到了市场上,给劳动力市场造成了非常大的冲击。他们自身要的价格就非常的低,作为雇主也借这个机会故意压低工资,扩大自己的利益,然后鼓励客人向这些服务员付小费。从这个时候开始就出现了服务业的雇主,希望用雇客去养活自己的雇员。
那在那个时候虽然奴隶制取消了,但是种族歧视这件事不会随着奴隶制的取消而消散。歧视是公开的,所以给你小费存不存在心理落差这件事情已经不那么重要了。白人打工者为了保持自己的竞争优势,也得压低工资,开始心平气和地去接收小费。
这样的行业最早是像酒店、宾馆,后来在 1859 年的时候,有一个人叫做乔治普尔曼,他自己创立了一个公司,就叫做普尔曼公司,开始在美国当初日益壮大的这个铁路网络上,承包那个豪华的卧铺车厢。1868 年的时候,乔治普尔曼开始大量雇佣廉价的黑人雇员,当搬运工。他付给这些黑人雇员的工资非常非常的少,然后当着顾客,打骂自己的员工,并且这个鼓励顾客说,你要是觉得可怜他,那你可以给他小费。

他这家公司在当初的美国铁路运输服务过程中壮大得非常快,也就在美国的小费习俗的推广过程中,起到了引领的作用。
但那为什么小费在今天的欧洲却远没有美国这样普遍或疯狂呢?这墙内开花墙外香也是归功于 19 世纪末,就是到了1890年代末,小费制度在市场上开始遭到强烈的反对。那这股风潮是全球性的。人们认为小费是非美国传统,它不具有美国性,它不是美国自有的,认为这是与这个所谓平等主义是背道而驰的一种理念。付小费的人要显示出来一种人高一等的感觉,除了对服务人员自身的地位贬低之外,小费它还有一种贿赂的作用。对于那些没付小费的那些顾客来说不公平。在这样的思潮的带动下,当初有美国的七个州就彻底禁止了小费。这七个洲都是美国当初的南部洲。在北部,当初的纽约时报也发表过一篇报道,批评说“男人喜欢享受那些搬运工和服务人员的奴性,喜欢陶醉于从这些服务人员那买来的微笑。他们喜欢以辨识的价格辨识就是几分几毛的这样的价格来购买和出售自己想要的礼貌”
但是美国的企业界并没理这个茬,仍然贪婪地把它坚持了下来。反倒是这反对小费的思潮在欧洲引发了结束这个小费做法的劳工运动。今天的欧洲没有美国对于小费那样的狂热。但实际上却以服务费的形式出现,其实跟小费也是一个意思。
那这个事情后来在这个美国小费是怎么被解禁的呢?还是那个乔治普尔曼的公司,因为太挣钱了,通过让员工接收小费,1916 年这家公司在人员成本上节约当初货币250万美元的年度费用。在巨额利润面前,资本家的压力下,州政府们又被迫将小费再次合法化。作为餐饮服务行业,在1938 年,弗兰克林罗斯福推出了公平劳动标准法案,设定了这个当初每个行业最低工资的标准,但不包括餐饮服务业,零售业、建筑业等等,所以这就使得没被包括进去的这些行业的这个雇主可以压低这些员工的工资。

1966 年法案修正之后,餐饮服务业也没有像其他行业一样被纳入典型的最低工资标准。相反的,允许餐饮服务业雇主们将这个小费算到基本工资里。所以在法律的加持下,在资本家的推动下,最终小费使得在全美得以成为了一个普遍型的现象,这就是美国小费的这个由来。
在今天,小费在美国已经进入了一种升级版的疯狂模式,本来一般情况下餐饮业坐下来吃,把点的东西放到桌子上才会付小费。像星巴克或者麦当劳这些都不算,另外像送餐上门,美容美发,出租车等等亲身为你服务的,也会给。以前餐饮行业标准都是从 15% 起,但现在由于通胀,水涨船高,基本上都是20%。
当今所谓通货膨胀产生的副作用,就是小费的膨胀与小费的溢出现象。在原先本来不该收小费的地方,提示要付小费。像快餐店的,咖啡店,快餐车,这种立等可取的以前都不好意思管人家要小费的行业也开始频繁地提示付小费,这是一个新现象。因为最早以前从本质上来讲说,这些人其实不算提供服务。他只是提供了他生产的产品。

这一集世界好好吃,咱们来说一说一个迷思,那就是很多人觉得北美的猪肉不如国内的好吃,有人觉得是由于国外宰牲时不放血,有人相信是国外对小公猪不去势,还有其它各种流言,这一期,咱们就借此话题来看一看,猪这种可爱又好吃的动物,从养殖到餐桌的过程,在国内国外真的有什么区别吗?

身在北美的很多朋友说超市里,无论是这个西人开的,还是华人开的,买到的猪肉不好吃,这其中的网络上的这个流言也非常的多,每一种都有着不同的解释啊。这个有人说是这跟放不放血有关,有的人说跟阉割不阉割有关啊?那到底是怎么回事?咱们这一期就都来说一说。
说到猪肉,很多人相信中国人喜欢吃猪肉,然而如果说中国人对猪肉的消费人均量非常大,那这句话就不准确了,看下图:

北美猪肉“不如中国的好吃”的这个问题,会存在多种差异与原因。首先,消费者普遍认为北美的猪肉“有腥味”,或者“肉质偏硬”。有些人认为,这可能是因为北美的屠宰过程中没有充分放血,导致血液残留在肉中,从而影响了口感。然而,在全球工业化养殖和屠宰过程中,放血是基本的操作标准。所有宰杀的猪都会放血,以确保肉质的鲜美和卫生。
再者,有人认为北美的猪肉“腥味”来源于公猪未经过阉割的肉。公猪未阉割可能导致“公猪异味”(Boar Taint),这种味道主要是由雄酮和粪臭素引起的。这些化学物质会在公猪的脂肪中聚集,导致肉在烹饪时散发出异味。但在北美,工业化养殖中大多数公猪都经过阉割处理,毕竟不是欧洲,因此这种情况应该并不普遍。
以下文字摘自于加拿大农林部门对“公公猪”的要求:
”除选定的种公猪外,基本上所有公猪在断奶前都会被阉割。这样做的两个主要原因是行为和肉质 (2)。随着年龄和体型的增长,未阉割的公猪往往对其他猪更具攻击性,而且比阉割过的猪更难处理 (2)。阉割对猪的肉质至关重要,因为猪通常在青春期开始时(约 6 个月大;2)被屠宰。众所周知,未阉割的公猪的肉会产生“猪膻味”,由于雄烯酮和粪臭素的存在,会产生难闻的气味和味道 (2)。
生产者的目标是在动物福利和高效生产优质猪肉的需求之间取得平衡。《养猪和处理操作规范》要求在 10 日龄后进行阉割时使用麻醉剂和止痛剂来控制疼痛 (6)。此外,任何年龄的阉割都必须使用止痛剂来尽量减少术后疼痛。
总之,阉割是加拿大牛和猪产业的常见做法,因为它可以减少攻击性、防止不必要的繁殖并改善肉质。虽然所有阉割方法都很痛苦,但可以通过在尽可能小的年龄进行阉割来最大限度地减少疼痛。尽量减少疼痛(例如减轻疼痛)可以改善动物在阉割等厌恶性手术中的福利。展望未来,研究应侧重于改进牛的免疫阉割,作为手术和非手术阉割的替代方案。这将使所使用的产品获得在加拿大使用的许可。“

此外,猪肉的品种也是影响口感的一个重要因素。北美的猪肉品种与中国常见的品种不同,例如北美主要的猪种有Berkshire(伯克希尔猪)、Chester White(切斯特怀特猪)和Hampshire(汉普郡猪)等。这些猪种的生长环境、饲养方式与中国常见的猪种有所不同,从而导致猪肉的风味和质地存在差异。文章指出,品种的差异可能是导致消费者感觉北美猪肉不如中国猪肉好吃的原因之一。

这一期世界好好吃咱们来说一说著名的达芬奇”最后的晚餐“中13个人到底吃了些什么。画作中与真实所发生的一幕又有着多大的区别。在两千多年以前,这13个人是怎么吃的这顿饭,而他们的餐桌上到底又都有些什么呢?就在这一期,世界好好吃。。。
说到这个基督与12门徒最后的晚餐,相信99%的朋友们都会想这幅达芬奇的著名画作。这幅画非常的经典,经典之处就在于是这 13 个人全部坐在桌子的一边,桌子的另一边空着,给人一种开大会在主席台吃饭的感觉。
在现实中完全不符合逻辑,但第一眼看到却丝毫不会产生违和感,这就是它厉害的地方。里奥纳多达芬奇,大家一定认识。

这位才是本人。。。
1490年代,达芬奇受到米兰圣玛利亚感恩教堂的邀请,给这个教堂的食堂画一幅壁画。这个教堂的食堂是一个长方形的,它两端是白墙,达芬奇在其中的一端画,对面那端是另一画家叫做达蒙托法诺画的基督受难。两幅画互相的透视法,使得这个食堂两端可以望出去似乎是很远,显得这个屋子非常的大。
这是达芬奇的代表作,画里面的内容就是基督与他的12门徒吃的最后一顿饭,席间他说了一句话,你们之中有人出卖了我。12门徒摆出了各种不同的pose,这也相当于是历史上最早的这个表情包了。
这一期的好好吃,咱们就把这个目光集中在他这个餐桌上来看一下,看达芬奇在这个餐桌上画的都是些什么食物?这幅画本身它也不是写实主义,它是一种想象,为了添满这个餐桌,它必然也要符合 15 世纪末的信仰环境下,达芬奇对基督那个时代的想象。
大家可以看到在这幅画作之中出现最多的就是鱼,长条桌上面一共摆了六条鱼,足可见鱼在 15 世纪末的这个重要性。为什么这么重要啊?这个原因其实咱们在讲美国史第一章的时候,从宗教改革到这个应许之地里面,咱们讲过啦。。。
而且这个鱼,还是鳗鱼。
这从侧面说明了在意大利文艺复兴时期,鳗鱼是一种高档流行食品。在这个时期的意大利烹饪书籍中也可以看到烤鳗鱼的制作方法。
除了鱼之外非常不幸的就是画完之后很快就开始变质,后期经战争,疏于维护等等各方面的原因。画有有很多盘子辨识不清了,至少有两个大盘子中的这个食物到今天看不清是什么了。大家有很多人去看这个达芬奇当初的笔记,因里头记载了一些说平时吃的东西,去猜那几个盘子里头是什么。
后来人给出的解释是达芬奇日记中的思路,相信达芬奇认为人应该吃的简单,所以在这个最后的晚餐这顿饭中,所画的主食也就只有鱼,那剩下的东西就是面包与水果,所以圆咕隆咚在桌子上一个一个的就是面包,水果很多人根据那个样式的猜想说可能是石榴。
如果最后的晚餐真的发生过,那这13个人到底吃的会是什么呢?咱们之前在中东往事中讲过这个情节,这个最后的晚餐是犹太逾越节的晚饭。所以只要去看一下回到2000多年前,在耶路撒冷的犹太人,他们逾越节大概都吃什么,这个谜题就能够解开了。
那逾越节吃什么?今天大家也许知道有几样东西是必不可少。第一个就是无酵饼,什么是无酵饼,它不能够有任何的酵母,无论是大麦、小麦还是黑麦、燕麦都无所谓,一般来说只要不含酵母就可以。
无酵饼上面有很多很多的小孔,原因是为了让能够去出所有的气泡,烤制的时候饼不会膨胀起来。它一定会是最后的晚餐里必备的主食。基督当初掰开的也就是这个饼,分的酒就是葡萄酒。
那除了无教饼,除了葡萄酒之外还有什么呢?人们可能会想到逾越节肯定会吃羊吧,但是基督当初所倡导的是苦行,并且要求他的门徒把财产都变卖了跟着他苦行。羔羊或羊肉在2000多年前的耶路撒冷是富人在逾越节才吃得起的东西。所以这13个人就不太可能在这个日子里吃上羊肉。

但是既然不会有羊肉,会不会有鱼肉呢?那这个有可能的。但更多人相信会有一种菜叫做bitter herbs,要是字面翻译就是苦菜。它像涮火锅常吃的苦菊,当然这是今天的品种了,当初的品种就不好说了。
也有可能会有一些椰枣,毕竟椰枣在当初的这个耶路撒冷比较常见,椰枣这个东西历史也很长了,咱们以后有机会可以讲一讲。
这13个人可能吃的也就是这么简单,但要说到地点和怎么吃的,今天人们相信地点是在这个耶路撒冷的upper room,肯定不会是像达芬奇画的那样是一个长条桌,因为这不符合 2, 000 多年前在耶路撒冷当地人吃饭的习惯。

在罗马时代的耶路撒冷,吃饭的方式有两种可能。首先看罗马人怎么吃饭呢?拉丁文中有一个餐厅一词叫做triclinium,字面的含义就是三张沙发。
就是这个样子,大家趴着吃,真正的趴体。。。
为什么要这个姿势呢?脚外头里,主要的原因就是卫生,脚搭在沙发的边缘有钱人,可以方便仆人给洗脚。
所以大家看到的罗马时代的吃饭场景都是这个样子

这是第一种可能,但13个人都是犹太人,而且也没钱,按理说不太应该这么吃饭。当初在upper room很可能就是席地而坐。几样东西未必就摆在一个小矮桌上,就是放在地上,大家席地而坐,以室内野餐的方式。

本期世界好好吃,咱们来聊一聊荔枝在中国历史中的文学地位。

要说哪一种水果是中国历史上最具文学情怀的,那荔枝一定会在榜上,当然还有桃与李,但今天咱们来好好说一说荔枝。荔枝在我儿时的记忆中,一直是一种奢侈品,尽管今天荔枝在中国广泛种植和食用,但在过去,尤其是在20世纪80,90年代的运输与保鲜条件下,在我老家那里,荔枝可真的犹如古诗中说的那样珍贵,至少给我当初的感觉是这样。
说起关于荔枝的从古时流传下来的诗句与文章数量在所有的水果之中绝对是数一数二的,相信所有的朋友至少可以随口就说出两句,杜牧的长叹“一骑红尘妃子笑,无人知是荔枝来”和苏轼的洒脱“日啖荔枝三百颗,不辞长作岭南人”。其实关于荔枝的古诗句古文章不下百首,与其能在数量上比一比的,也就真的只有桃子与李子这两位了。
其原因有两个,一个就是荔枝在作为一种中国的特产,其在中国的水果历史上非常的久远了。荔枝主要生长在中国南方的华南地区,包括广东、广西、福建等地。荔枝的历史可以追溯到西汉时期,最早在《上林赋》中出现。当时的荔枝是野生品种,著名的一种被称为“火山”,经过不断的人工栽培和驯化,到了唐朝,荔枝的品质得到了极大的提升,出现了无核荔枝等优质品种。
第二个原因就是它真的好吃,荔枝的甘甜和美丽在古时的有限类别的水果中,在糖分上是数一数二的,是自然界中不可多得的天然甜食。这样的水果,谁不爱呢?如上面所说,赶在唐代荔枝品质得到了极大的提升,甚至出现了培育的“无核”荔枝,在唐与其后的宋这几百年间,各个文人墨客们,吃high了总要写上几笔,发个朋友圈什么的。
白居易发了一个《荔枝图序》:“荔枝生巴峡间,树形团团如帷盖,叶如桂,冬青,华如橘,春荣,实如丹,夏熟,朵如蒲萄,核如枇杷,悫如红缯,膜如紫绡,瓤肉莹白如冰雪,浆液甘酸如醴酪。大略如彼,其实过之。若离本枝,一日而色变,二日而香变,三日而味变,四五日外,色香味尽去矣。”
张籍,来听我的演唱会,发表新歌《成都曲》:“锦江近西烟水绿,新雨山头荔枝熟。万里桥边多酒家,游人爱向谁家宿。”
元稹《荔枝诗》:“五月荔枝初破颜,朱垂碧叶倚青山。东风已绿瀛洲草,紫殿红楼作御盘。”
张籍:“元稹你怎么盗我图啊。。。”
黄庭坚,好吃,随手写一首《浪淘沙》:“忆昔谪巴蛮。荔子亲攀。冰肌照映柘枝冠。日擘轻红三百颗,一味甘寒。重入鬼门关。也似人间。一双和叶插云鬟。赖得清湘燕玉面,同倚阑干。”
苏轼,看我的《惠州一绝》:“罗浮山下四时春,卢橘杨梅次第新。日啖荔枝三百颗,不辞长作岭南人。”,在惠州随手自拍。。。
陆游,我也来一首:“病与愁兼怯酒船,巴歌闻罢更凄然。此身未死长为客,回首夔州又二年。”。。。
苏轼:“你这也没荔枝啊??”
陆游:“这个川菜馆子就叫荔枝楼。。。”
苏轼:“行。。。”
但要说最出名的,还真的就是杜牧的那句“一骑红尘妃子笑,无人知是荔枝来”
由此很多人相信杨贵妃除了爱洗澡外,还爱吃荔枝。结合了后世苏轼的“日啖荔枝三百颗,不辞长作岭南人”,更是相信杨贵妃吃的荔枝就是从岭南送到长安的,并把唐朝最终走向衰落归咎与杨贵妃本身。
强盛的王朝不会因为几颗荔枝送命,杨贵妃在历史也不一定真的那么对荔枝上瘾。就算千里飞骑来送,也不一定会是从岭南,而很可能是从四川。杨贵妃的出生一直是一个谜题,但她早年很可能在四川住过。也正是在那个时候,可能吃过那里的荔枝。
对,川地产荔枝。。。上面白居易和张籍都有朋友圈作证,自古,至少是在唐时,就是产荔枝的地方。。。
所以进宫后的杨贵妃要吃也多半是出于想念儿时熟悉的味道。。。

荔枝在后世的传播中,被移种到了中南半岛,在越南等地也开枝散叶起来。但今天如果在北美,大家还会看到一个荔枝的产地,那就是墨西哥。
这种墨西哥荔枝味道也不错。它在墨西哥的历史也是最初由修铁路的华工与1900年代初带到墨西哥去的。并在西那罗亚地区被种植,墨西哥的天气对于荔枝来说还是比较适合的:

这集还是要好好吃,聊一下著名“开封菜”,蛋挞的演化世,它到底是中式的,葡萄牙的,还是英国来的,还是法国来的呢?请听,关于蛋挞的身世之迷。。。

在前几集中介绍过一些中国传统饮食流传到海外之后在异地生花的当地特色食品,泰式炒粉,肉骨茶,左中堂鸡等等。今天咱们来说一个在中国才的但却受外来饮食文化影响的食品,那就是蛋挞。
蛋挞一词从词源上就可以看出来它是一个泊来品。蛋自然就是鸡蛋,挞则来源于英文“tart”。Tart与Pie派很像,唯一的区别就是有盖还是没盖:
一般来说,不在上面盖上与饼身一样材料的就是Tart,盖上的就是Pie
今天我们常吃的蛋挞其实有两种,一种是港式,一种是澳/葡式,两种的来历其实完全不同。。。咱们先说港式的:
港式蛋挞一般来说,其酥皮是传统中式酥皮,是用猪油起酥做成的。里面的蛋液则是来自于广式蒸蛋,或蒸水蛋,鸡蛋膏。这种传统做法一般不去除蛋清。口感上来说,港式的皮就像传统中式点心的酥皮一样,偏硬一些,蛋心滑润,口感偏淡。

说起港式蛋挞的起源,其实并不是香港,而是广州。在1930年代时期,广州作为最早的开放口岸,在当初流行百货公司。各大百货公司之间竞争顾客,吸引顾客到百货公司里购物,会定期在自家食品店里竞相推出新式的小吃,据说每周还要变花样。

各店绞尽脑汁慢慢琢磨到西式点心上了。那个时广州受英国饮食文化影响最大,就选到了一种叫做 custard tart 这么一种英国的甜品。只是受于材料的限制,将牛油酥皮改成了中式的猪油酥皮,再把心换做广式蒸蛋,这样,中式的蛋挞就出现了。

之后随着日军入侵,很多糕点师傅躲入香港避难,中式的蛋挞也就被这样带到了香港,在香港生根发芽,成为了一个具有港式特色的点心。
那咱们再来看澳/葡式蛋挞的来历。
澳/葡式蛋挞
相比港式蛋挞,澳/葡式蛋挞的历史比较晚。它的出现来自于一个英国人,安德鲁。
安德鲁本人
以下是出于安德鲁自己的简历,安德鲁于 1955 年 4 月 8 日出生于英国,曾在诺丁汉的Boots公司担任工业药剂师。1979年,他偶然发现了一个就业机会,并前往澳门的英法实验室利用自己的制药经验。1984 年 6 月,安德鲁与女友玛嘉烈·黄 (Margaret Wong) 成立了热带健康食品有限公司。为了支持自己刚刚起步的公司,安德鲁成为澳门凯悦酒店的企业培训生,——当时澳门领先的葡萄牙餐厅。1988 年底,安德鲁与玛嘉烈·黄结婚。1989 年 9 月 15 日,安德鲁和玛格丽特的公司在澳门路环村开设了安德鲁面包店。1990 年初,安德鲁庆祝女儿奥黛丽的出生。这一年,安德鲁号称“独自发明"了蛋挞,这为他带来了另一个值得庆祝的理由。从此,安德鲁蛋挞就成了澳门的标志。
其实安德鲁早年去过葡萄牙,葡萄牙有一种甜品“Pastel De Nata”,如下图这样。

“Pastel De Nata”在里斯本本来就很流行。最著名的店就是下面这家
安德鲁的“独立发明”其实就是源自于此。不过安德鲁的确对其做了本地化的处理,使其更偏于中国人的口味。
“Pastel De Nata”的特点就是加入了焦糖,这也就是澳/葡式蛋挞蛋液上斑驳颜色的由来。“Pastel De Nata”历史具体什么年份在今天已经无法考证了,但肯定是由修道院中住在里斯本的修道士开始的。在当初的修道院要用蛋清去浆洗衣服,把那个蛋清分离出来之后,为了不浪费剩下的蛋黄被修道士们收集起来之后,做成了这种葡萄牙式的糕点。

当然,这事儿还有一些别的解释,就是英国人说是跟英国人学的,法国人说这些葡萄牙僧侣早先在法国阿维尼翁教皇时期在法国住过。就在那个时候,葡萄牙人在法国学会了制作糕点的方式。法国人相信包括英国的custard tart也是一样,所谓天下武功出少林,全欧的甜品都在来自于法国。但不管怎么样,这就是安德鲁所做的澳/葡式蛋塔的真实由来。

2004年的时候,玛嘉烈把葡挞的配方授权给了肯德基,这才有了肯德基的葡式蛋挞。。。
所以,综上,港式蛋挞与葡式蛋挞两者并不是一种东西,也不是出于同一出处,不是同一个历史,而作为好好吃的好会吃的朋友,你更喜欢哪一个呢?

百吉饼最初的售买方式
百吉饼是一种北美常见的面包圈,与甜甜圈不同,它是烤制而非油炸,且在烤制前需要先用水煮,口感更具嚼劲。这份嚼劲就来自于它特殊的制作过程的一个步骤——水煮:

别看煮完的面团是皱的,但只要一烤,就又圆起来了。
在烤前一般都要撒上一些配料,最常见的就是蒜蓉,芝麻,肉桂,芝士和罂粟籽。
而说到罂粟籽,它分成洗过和未洗过两种,没洗过的那个籽它是具有上瘾性的。但是洗过的这个籽是可以在北美的一般超市买到,用这个当做食品调料的。美国的 FDA加拿大食品安全局对其有专门的食品安全标准。但有时也一样会出乌龙,曾经纽约一新妈妈差点因此失去对孩子的抚养权。。。

但要说到百吉饼在北美的历史,这事儿还得和犹太移民有关。很多人一听到犹太移民常会想起二战,但其实二战时美国所接纳的犹太难民少之又少,还曾经发生过圣路易号事件,此事件咱们在《中东往事》中详细地讲过。

所以百吉饼并不是在二战时进入美国的,而是比这还要早上近一百年。是在之前的19世纪,随着欧洲,主要是东欧犹太移民的到来,它逐渐成为一种广受欢迎的食品。

而说到北美如今的百吉饼,主要有两大流派,纽约与蒙特利尔,两座城市都拍着胸脯说自己的百吉饼天下第一。。。
