Saturday Morning with Jack Tame

This is an uncooked, fresh and zingy sauce used for meat and poultry. The balance of acidity, heat and herbaceousness in this sauce is what makes Argentinean BBQs famous! I love to use it on grilled or roast chicken – it brings it alive!
½ cup olive oil
¼ cup red wine vinegar
1/2  cup finely chopped parsley
2 spring onions, chopped fine
2-3 cloves garlic , finely chopped or minced
1 red chili, deseeded and finely chopped
2 tbsps fresh oregano
½ - 1 tsp sea salt

Mix all ingredients together in a bowl. Allow to settle for at least 15 minutes so that all ingredients release their flavours and start to get along! Taste and add more salt or maybe some lemon juice to season.
Use to marinate meats and poultry or to baste meats while grilling, roasting or barbecuing. And always make enough so that you can add a couple of tablespoons over your cooked meats or chicken.

Jack Tame talks of his admiration for the mothers of Plaza De Mayo who have congregated weekly for over 40 years, seeking justice and information on what happened to their loved ones who disappeared during the military dictatorship between 1976 and 1983.
